- To choose fresh aloe vera, you should select those with small branches and even green color.
- Moreover, you need to pay attention to choose aloe vera branches that have white spots; when cut, if there is sticky sap coming out from the cut, then these branches are still fresh.
- You should not buy aloe vera that has a green color leaning towards the edge of the spikes because this indicates that the aloe vera has wilted. You should also avoid buying large branches that are purple-green, as they may look appealing but do not contain as many nutrients as the smaller ones.

How to prepare Aloe Vera Jelly

Prepare the ingredients
After purchasing, wash the aloe vera thoroughly, then use a knife to trim the two edges and the skin on both surfaces of the aloe vera. Next, place the aloe vera on a cutting board and chop it into large cubes.
Then, wash it with a little diluted salt water and rinse a few times with clean water, blanch the aloe vera briefly in a little hot water, then transfer it to a basket to drain.
After purchasing the coconut, use a knife to chop off the outer shell and the hard top part of the coconut to extract the water.

Cook aloe vera jelly
Pour 1.5 liters of filtered water into a pot of fresh coconut water along with ingredients including: 1 packet of jelly powder, 500g of rock sugar, stir well to dissolve the jelly powder and sugar in the water.
Place on the stove and cook over medium heat, stirring continuously for about 10 – 15 minutes until many bubbles appear on the surface, then reduce to low heat.
Scoop 5 – 7 ladles of jelly water from the pot into a bowl of condensed milk and stir well for the jelly and milk to blend together.
Add all the cut aloe vera into the remaining jelly pot on the stove and stir well, reducing the heat to very low, without turning off the stove to prevent the jelly from solidifying.

Remove the jelly from the mold
Put a layer of condensed milk jelly into the mold and let it set for about 3 – 5 minutes until the jelly in the mold hardens. When the jelly is set, continue to add a layer of aloe vera jelly into the mold. Continue the process if you want to make more layers.
Let the jelly set for about 7 – 10 minutes before it can be used immediately. If you want it to taste better, you should put the jelly in the refrigerator refrigerator!
