How to choose fresh pig intestines

  • Good quality fresh intestines will have a small, plump, bright pink color.
  • You can press and gently squeeze the intestines. Good intestines will have elasticity, firmness, and the liquid that comes out should be milky white without any foul smell.
  • Additionally, you should buy intestines in the early morning when they are still fresh. It’s best to purchase from reputable places with clear origins and that have been inspected by the Ministry of Health.
  • Absolutely do not buy intestines that show signs of sliminess, foul odor, soft flesh, pale green or dark purple color, and have flies around them. These intestines may have been stored for too long and are no longer fresh.

How to choose fresh large intestines

  • To buy good large intestines, you should go to the market early, choosing the type that is the head, stem, with a plump, round shape, bright pink color, and the liquid inside should be yellow or milky white.
  • Absolutely do not choose any segment of large intestines that is purple or starting to turn green. Because those are large intestines that have been kept for too long and are starting to deteriorate, which will not taste good and can be harmful to health.

How to Prepare Korean Grilled Intestines

  • Cleaning and Blanching the Pork Intestines

    You cut the small intestines and the pig’s stomach into shorter pieces and put them into a basin, squeeze in the juice of 1 lemon and add 1 tablespoon of salt, then proceed to massage them evenly for about 5 minutes.

    After massaging, you rinse the intestines and stomach with water. Pour water inside the intestines and use your hands to stroke the intestinal tube to remove any dirt inside. Repeat 2 – 3 times to ensure the intestines are clean.

    Next, you place a pot on the stove, turn on medium heat, add 1.5 liters of water, 3 green onion stalks, and 1 sliced ginger piece to boil. When the water boils, you add the small intestines and stomach to blanch for 3 minutes, then remove and soak in a basin of ice water with the juice of 1 lemon for about 10 minutes, then take them out to drain.

    Tip:
    • After using lemon and salt, you can also use vinegar to clean the intestines. Massage the intestines with lemon and salt for 5 minutes, then put them into boiling water. Add 1/3 cup of vinegar to the pot, let it sit for 2 – 3 minutes, then rinse clean.
    • Additionally, you can use various other ingredients to clean the intestines such as flour, fish sauce, etc.

  • Marinate the pig intestines

    You marinate the intestines and the offal with 1 teaspoon of five-spice powder, 2 tablespoons of garlic powder, 1 tablespoon of chili powder, 2 tablespoons of sesame oil, 4 tablespoons of soy sauce, 2 tablespoons of fish sauce, 3 tablespoons of malt syrup, and 2 tablespoons of Korean chili paste.

    Mix the intestines with the spices and let marinate for about 30 minutes in the refrigerator to absorb the flavors.

  • Grill the pig intestines

    After marinating, you proceed to grill the intestines. Preheat the grill for about 5 minutes at medium power, then cut the intestines into small pieces and place them on the grill.
