Cleaning and Blanching the Pork Intestines
You cut the small intestines and the pig’s stomach into shorter pieces and put them into a basin, squeeze in the juice of 1 lemon and add 1 tablespoon of salt, then proceed to massage them evenly for about 5 minutes.
After massaging, you rinse the intestines and stomach with water. Pour water inside the intestines and use your hands to stroke the intestinal tube to remove any dirt inside. Repeat 2 – 3 times to ensure the intestines are clean.
