How to choose good red beans
- To cook delicious noodles, you should choose red beans that are medium-sized, round and uniform, with no signs of insect damage, and dark red in color. It’s best to select beans that are slightly larger than green beans; such beans will be richer, softer, and tastier.
- Do not choose beans that are too large, as they often contain fewer nutrients than smaller beans and can create a slight astringent taste when cooked.

How to prepare Korean Red Bean Noodles

Cook the red beans
Wash the red beans, place them in a pot with 12 cups of clean water, and cook on high heat for about 30 minutes. Then simmer on low heat for about an hour and a half until the beans are soft and mushy.
Tip: You can use a pressure cooker to cook the red beans, which saves time. Place all the red beans in the pot as mentioned above and cook for 30 minutes for the beans to become soft and mushy.

Grind and knead the dough
Take 175g of flour, 35g of potato starch, 1/2 teaspoon of salt, 1 tablespoon of cooking oil, and add 3/4 cup of water and start grinding the dough using a food processor or mixing by hand.
After the dough is ground into a non-sticky mass, place it on a mat and knead a few times, stretching the dough out and folding it in half, repeating this about 5 – 7 times. Then place the dough into a sealed plastic bag and let it rest for about 30 minutes.

Grinding beans
Filter the previously cooked red beans, put them all into the blender along with a little cooking water. Blend until smooth and return the mixture to the pot of previously boiled beans. Turn on the stove and continue to cook the mixture over medium-low heat.

Kneading dough to make noodles
Take the previously fermented dough out, sprinkle a little flour on the mat to prevent sticking, and knead the dough a few times with your hands to make it more elastic.
You should use a rolling pin to roll the dough as thin as possible until the dough has a thickness of about 3 – 4 mm. Be sure to sprinkle more dry flour on top while rolling the dough to prevent sticking!
Fold the dough and start cutting it into bite-sized strips, sprinkle a little flour on top and mix them up to prevent the noodles from sticking together.

Cooking noodles
At this point, the red bean water has started to boil, add 2 teaspoons of salt, and stir well. Then drop all the noodles into the pot, use chopsticks to stir evenly and cook for about 4 – 5 minutes until the noodles are cooked.
When the noodles are cooked, they will float up, just stir them again to check if they are fully cooked.
