  • Choose fresh pork belly, with a pinkish-white color, with a balanced layer of fat and meat, and intact milk veins.
  • Fresh pork belly should have a clean surface, and when touched, it should not feel slimy.
  • Avoid choosing pork belly that is pale white or bright white, as they may have been soaked in bleach.
  • Do not buy pieces of pork belly that have an unusual smell, feel slimy when touched, or are mushy.
  • Do not purchase pork belly with a foul smell, or with surface spots of blood clots, or unusual black spots.

How to prepare boiled pig’s intestine with shrimp paste

  • Prepare pig’s intestine

    Buy pig’s intestine, wash it clean, rub it with salt, then wash it again with clean water, and cut it into bite-sized pieces.

    How to clean pig’s intestine without odor:

    • After buying the pig’s intestine, you will rub it with 1 tablespoon of coarse salt for about 5 minutes, then rinse it with clean water.
    • To eliminate the odor of pig’s intestine, you can also rub it with the juice of 1-2 lemons and rinse it again with water.
    • Using vinegar to wash the pig’s intestine is also effective in cleaning and removing the odor.

    Peel the green bananas, slice them thinly along with the starfruit. Chop the Vietnamese coriander finely.
