Put 230g of tapioca flour into a large bowl, add 100ml of boiling water and mix well.
Then pour in 60ml of kiwi syrup and 1/2 tablespoon of water into the bowl and mix well. Next, use your hands to knead the dough until it sticks together into a homogeneous mass, then let it rest for 30 minutes.
Now shape the dough into small round balls. Boil a pot of water, drop the pearls in, and cook until they float to the surface. Once the pearls rise, remove them and place them in a bowl of cold water to soak for about 5 minutes, then drain.

Add 250g of sugar, 2 tablespoons of water, and the juice of 1/2 lemon into a pan, and stir well. When the sugar boils and turns into a thick mixture, turn off the heat.
