How to choose fresh and delicious ingredients
How to choose fresh lemons
- Choose lemons that are medium-sized, with thin and firm skin. When you touch the lemon skin, it should feel smooth, not rough.
- Juicy lemons will feel heavy in your hand, and when you press lightly on the skin, you should see essential oil being released, with a pleasant aroma. If the lemon has a pungent smell, it is likely to have been sprayed with chemicals.
- Avoid choosing lemons that are dull yellow, have rough skin, are spotted with black, or are damaged or rotten.

How to choose the right butterfly pea flowers
- You can use fresh or dried butterfly pea flowers for your drink.
- For fresh butterfly pea flowers, you should choose fresh blooms with intact petals that are not bruised.
- For dried butterfly pea flowers, choose those that are tightly packed in packaging and have a clear origin. Avoid those that appear discolored, damp, or past their expiration date to prevent health issues.
How to make butterfly pea lemon tea
-
Prepare the ingredients
Wash the lemon with water, squeeze the juice from one lemon, and slice the other into thin rounds for decoration in your tea. Strain the lemon juice through a sieve to remove the seeds.
Put 2 grams of dried butterfly pea flowers into a bowl and soak with 100ml of boiling water for about 10 minutes to extract the color, then remove all the flower remnants to obtain the butterfly pea water.
-
Soak the tea
Pour 500ml of boiling water into a bowl, then add the tea bag and soak for about 5 – 10 minutes, allowing the tea to infuse slowly until the water turns a deep yellow, then remove the tea bag.
Tip: Do not boil the tea directly on the stove as it will make the tea bitter.
-
Cook the sugar syrup
Place a pot on the stove, add 300ml of filtered water along with 100g of sugar and bring to a boil. When the water boils, reduce the heat and continue cooking until the sugar syrup thickens, then turn off the heat.
Tip: Using sugar syrup instead of granulated sugar helps the sugar dissolve more easily.
-
Brewing Butterfly Pea Lemon Tea
Pour 100ml of brewed tea into a glass, add 50ml of syrup that has just been made, and 1 teaspoon of lemon juice, then stir gently before adding ice cubes. Next, pour 20ml of butterfly pea flower water on top.
Finally, garnish with a few thin slices of lemon to complete.
Tip: You can adjust the sweetness and sourness according to your taste.
-
Final Product
You now have a stunning two-colored butterfly pea lemon tea, a drink with a distinctive fragrance, a light astringency from the tea combined with a delightful sweet and sour taste. Enjoy your meal!
