How to choose fresh ingredients to make lotus root noodle dish
Choosing good lotus root:
- It is best to choose lotus roots that are both thick and short because they will be riper and have a better flavor.
- The exterior of the lotus root should be plump, without any unusual bumps or dents.
- The skin of the lotus root should have a yellow color; avoid choosing white-skinned lotus roots as they may have been chemically bleached.
- It should not have any strange smell.
- The larger the air holes inside the lotus root, the more water it contains and the better the taste.
Choosing good shiitake mushrooms or fragrant mushrooms:
- Good mushrooms will have a moderate size, not too big and not too small.
- They should feel firm to the touch and not be soft or mushy.

How to prepare Vegetarian Lotus Root Noodles

Prepare the lotus root
Peel the outer silk skin of the lotus root, then soak it in water with a little vinegar or lemon juice to prevent browning during preparation.
Next, use a knife to cut the lotus root into slices about 0.5 cm thick.

Prepare the other ingredients
Wash the carrots, drain them, peel the outer skin, and then cut them into pieces.
Peel the skin off the ginger and shallots, then chop them finely.

Cook the broth
Add a little oil to the pot over medium heat. Sauté the ginger and shallots until fragrant. Then add 2 tablespoons of water along with 1 tablespoon of raw sugar, stir-frying the ingredients until they are slightly browned.
Next, add fresh shiitake mushrooms, carrots, and lotus root, and stir well. Add a little water if necessary. Sauté the ingredients with a bit of salt for a richer broth. Then add kombu seaweed.
Pour about 1 liter of water into the pot. Bring to a boil, then reduce the heat and simmer for about 20 minutes.

Cooked rice noodles are placed in a bowl, add boiled vegetables (according to your preference), a few slices of lotus root, a few fresh shiitake mushrooms, pour in the broth, and serve with soy sauce and some slices of chili. Invite your family to enjoy!
