Ingredients for Mango Bingsu For 3 servings
Mango 2 fruits (500gr) Fresh milk 480 ml Condensed milk 120 ml Lemon juice 1 tablespoon Sugar syrup 50 ml
How to choose fresh, ripe mangoes
- Choose mangoes with evenly colored yellow skin, firm flesh, without bumps or tiny dark spots.
- Choose mangoes with the flesh firmly attached to the stem, not soft and mushy.
- Ripe mangoes have a gentle and characteristic fragrance.
- Gently squeeze the mango; naturally ripe mangoes will have a certain firmness, feel solid in hand, and won’t crush when pressed.

How to make Mango Bingsu

Mix milk and freeze
Mix 480ml of fresh milk, 120ml of condensed milk with 120ml of warm water. Stir well, then pour into a zip bag, seal the bag tightly, and place it in the freezer refrigerator overnight for the milk to freeze completely.
Tip:- Make sure to spread the milk bag out evenly and thinly, as this will make the freezing process easier.
- If you’re short on time, you can freeze it for about 4 – 5 hours to get the milk to freeze evenly.

Prepare and puree the mango
Wash the mango under running water to remove all dirt and anything left on the skin of the fruit.
Cut off 2 cheeks of the mango. To easily separate the mango flesh and minimize juice loss, turn the mango cheek (with skin) upside down and use a knife to cut the flesh into squares, then scoop it out with a spoon and set it aside.
For the remaining mango on both sides of the fruit, peel off the flesh and also cut it into square pieces. Use half of the mango flesh in the blender and puree it, while keeping the other half in whole pieces.

Cook the mango sauce
Add the pureed mango to a pot, place it on the stove and cook over low heat for about 1 – 2 minutes. Then add 1 tablespoon of lime juice and 50ml of sugar syrup, stir well and cook until the mango sauce thickens.
Tip: You can adjust the amount of sugar syrup according to your desired sweetness. Instead of using sugar syrup, you can mix white sugar with water depending on the sweetness you want! -
Crush the frozen milk
After the milk has been frozen, take it out and cover it with a dry cloth to avoid tearing the zip bag when crushing the milk.
Use a pestle or a hard object to crush the frozen milk until it is smooth and fluffy like crushed ice.
Tip: To make the crushed frozen milk finer and smoother, you can put it in a blender with an ice-crushing function to blend it well -
Completion
Take a large bowl, first add a layer of mango sauce at the bottom, then add a layer of crushed frozen milk on top, followed by diced mango. Continue this way, alternating layers of frozen milk and diced mango until the bowl is full.
