    Soak the snails in salted water for about 1 hour to allow them to expel all the sand, then rinse thoroughly with clean water several times and let them drain.

    Next, to remove the fishy smell from the snails, prepare a pot of boiling water, add 1 tablespoon of vinegar, 1 tablespoon of white wine, and boil for about 30 minutes.

  • Extracting and cutting the snails

    After boiling the snails, take them out and rinse them with clean water, then use a chopsticks to extract the snail meat. Next, use a knife to scrape around the meat clean, then cut off the intestines of the snails.

    Tip: To avoid the snails becoming bitter and ruining the dish, you should clean the intestines before cooking.

    When the snails have cooled down after washing, the salad will not taste good. You should blanch the snails in boiling water for 30 seconds, then slice them into thin, bite-sized pieces.

  • Mixing the salad

    Add to a bowl of mango in layers including onion, snail, the ground spice mixture, water mint, and half the amount of peanuts, then mix well to let the snails absorb the seasoning.
