How to choose delicious mangoes
- You should choose mangoes that are uniformly yellow, have a white powdery coating, and the flesh is firm at the stem end.
- Choose mangoes with taut skin, free from blemishes or dark spots.
- If the mangoes at the stem end have a strong sweet aroma and essential oils, then those mangoes will not contain preservatives.
- You should avoid choosing overly soft or hard mangoes; select those that have a certain firmness and feel solid in your hand.
- Note that if the small eyes at the tail end of the mango are small, those mangoes will have smaller seeds and more flesh.
How to choose good pig stomach
- You should choose pig stomachs that are bright in color and thick.
- Lightly press your finger on the pig stomach; if it does not deform and has good elasticity, it’s suitable.
- Pay attention to see if there is a lot of fluid inside the stomach, without hard parts or hard particles, indicating a good stomach.
How to prepare Mango Salad with Pig Intestines

Prepare the ingredients
Squeeze the juice from 5 calamansi limes and remove the seeds. Peel the garlic and mince it finely, and mince 2 chili peppers in the same way. Cut 2 stalks of lemongrass into small rounds. Chop the cilantro and basil into small pieces.
Peel 1 carrot and 1 mango, then cut them into strips. For the cucumber, remove the seeds and slice it diagonally into small bite-sized pieces.
Wash the pig intestines thoroughly and boil them in a pot of water for about 5 – 7 minutes.
Tips for cleaning pig intestines, preventing odor
- Use a knife to remove the fat from the intestines.
- Then turn the intestines inside out.
- Put the intestines in a bowl with some salt and vinegar, then rub them to reduce the sliminess, and rinse with water.
- Continue to do this once more to completely remove the sliminess.
- Put the intestines in a pot of water, add a bit of salt and some monosodium glutamate, and then boil.
Once the intestines are cooked, prepare a bowl of ice water and place the intestines in it to cool quickly, making them crispier and whiter.
After the intestines have cooled, remove them to drain, then cut into strips or small pieces according to your preference and place them in a bowl.

Prepare the dressing
You take a bowl and add 3 tablespoons of sugar, 4 tablespoons of fish sauce, 4 tablespoons of calamansi juice, 1/3 tablespoon of seasoning powder, then stir well until the mixture is completely dissolved.
Finally, you add chopped garlic and chopped chili to the bowl of dressing.

Mix the salad
You stir up the dressing and then drizzle a sufficient amount (2 – 3 tablespoons) of the dressing into the bowl of pork stomach. Put on plastic gloves, then mix and massage the stomach thoroughly to ensure it absorbs well.
The remaining fish sauce should be added gradually to the prepared vegetables and mixed separately to avoid the vegetables releasing water, which would make the stomach less flavorful. Once the vegetables are mixed evenly, you add the stomach and mix once again.
Next, you add the basil and cilantro and gently toss the salad.
