  • Prepare and skewer the shrimp

    Wash the shrimp thoroughly, let them drain, and then use a skewer to pierce through the body of the shrimp.

    Pour 100ml of cooking oil into the pan and heat it over medium heat. When the oil is hot, add the skewered shrimp and fry for about 2 minutes until the shrimp are golden, then remove and drain the oil.

  • Prepare and fry lemongrass

    Wash the lemongrass, drain it, slice it thinly, and put it in a bowl.

    Add 3 tablespoons of tapioca flour, mix well, and then add it to the pan with the oil used to fry the shrimp, frying for about 2 minutes until the lemongrass is golden and crispy, then remove it.

  • Make peanut butter sauce

    Place another pan on the stove with 10ml of cooking oil and heat it over medium heat. When the oil is hot, add the minced garlic and sauté until fragrant.

    Next, add 1 tablespoon of peanut butter and stir for about 2 minutes until the sauce thickens slightly, then turn off the heat.

    Prepare a large pot, lining the bottom with a banana leaf, then add the salt and place the fried shrimp on top.

    Take the fried lemongrass and place it on top of the shrimp, sprinkle a little more salt, then burn the lemongrass until it catches fire, and grill the shrimp briefly over the flame for about 10 – 15 seconds.

    Finally, you just need to place the marinated shrimp on a plate and pour the peanut butter sauce over it to enjoy.
