- Choose fruits of moderate size, feel heavy in hand, with a fresh stem, and no black spots on the skin.
- Avoid choosing fruits that feel light, soft, have a hollow inside, have scratched skin, and a withered stem, as these fruits are often spoiled or poorly handled during transportation and storage.
- For this dish, you can use either aromatic loofah or ridged loofah.

- Choose mushrooms with a firm stem, large cap, which can be gray or white (depending on the type) but should not be too torn; the mushroom tip should be slightly concave with thin gills under the cap.
- Choose clusters of oyster mushrooms that are fresh and have a characteristic mushroom aroma.

Beef bought should be washed clean with water, drained, and then cut into thin slices for eating.
How to clean beef effectively and remove the unpleasant smell
- Method 1: After washing the beef with water, rinse it with alcohol or soak the meat in alcohol for about 15 minutes to reduce the unpleasant smell in the meat, while also ensuring the meat will be softer and tastier when cooked.
- Method 2: While marinating the meat, instead of using garlic in the usual way, you can roast a bulb of shallot, peel it, then pound the shallot and marinate it with the beef.

Oyster mushrooms should have the stems removed, cut the large mushrooms in half, and then soak them in diluted salt water for 10 minutes. Then squeeze out the water and let them drain.
The gourd should be peeled and washed clean. Next, use a knife to cut it into pieces about the thickness of one finger.
Shallots should be peeled and chopped. Green onions and coriander should have the roots trimmed, washed with water, drained, and then chopped finely.

Marinate beef
Put the beef into a bowl, marinate with 3 teaspoons of fish sauce, 2 teaspoons of ground pepper, and mix well to let the beef absorb the marinade.

Cook the soup
Place a pot on the stove, add 3 tablespoons of cooking oil. Wait for the oil to heat, then add chopped shallots and sauté until fragrant. Next, add the marinated beef and stir-fry for 3-4 minutes, then add the bottle gourd and mushrooms and stir-fry together.
Season the pot with 4 teaspoons of seasoning powder, 2 teaspoons of sugar, and continue to stir-fry for about 3 more minutes for the bottle gourd and mushrooms to absorb the flavors.
Tip: You should not overcook the beef as it will become tough.Then, add 2 bowls of filtered water to the pot and cook for about 4 minutes over medium heat. When the soup comes to a boil again, taste and adjust the seasoning. Finally, turn off the heat, add chopped green onions and coriander, and it’s done.
