Flan 1 piece Cocoa powder 80 gr Condensed milk 150 gr Black tapioca pearls 200 gr Unsweetened fresh milk 450 ml Gelatin powder 5 gr Brown sugar 250 gr Winter melon tea 70 ml Sugar 115 gr Filtered water 500 ml

How to make Milo sauce for flan

  • Making Milo sauce

    You put 150g of condensed milk, 50g of cocoa powder, 15g of granulated sugar, and 200ml of unsweetened fresh milk into a large bowl, using spoon to stir well until the mixture is completely dissolved.

    Place a pot on medium heat, add the cocoa milk mixture to the pot, and stir continuously for about 10 minutes until the mixture thickens.

    Turn off the heat, remove the pot, and pour the Milo sauce into a bowl to cool.

  • Making Milo Jelly

    Put into a bowl 100gr of sugar, 30gr of cocoa powder, and 5gr of jelly powder, and mix well for the 3 types of powder to blend together.

    Place a pot on the stove and boil 500ml of filtered water, when the water is boiling vigorously, pour the powder into it and stir quickly to dissolve the powder completely, then add 250ml of unsweetened fresh milk and stir well for another 5 minutes until the mixture boils and is completely dissolved.

    Turn off the heat, pour the mixture into the jelly mold and let it cool slightly, then place it in the refrigerator refrigerator for about 30 minutes until the jelly sets. You can take the jelly out and cut it into any shape you like.

  • Boiled Tapioca Pearls

    Put a pot of water on the stove over high heat, when the water is boiling vigorously, add 200g of black tapioca pearls to the pot to cook. While boiling, use chopsticks to stir regularly to ensure that the pearls cook evenly and do not stick together.

    Cover with a lid, reduce the heat, and boil the pearls for about 15 minutes. When you see that all the pearls are fully expanded, chewy, soft, and floating on the surface of the water, the pearls are done.

    After boiling the pearls, cover them and let them sit for 30 minutes for the pearls to fully expand. Then, scoop out the pearls and put them in a bowl of cold water to blanch briefly, then remove and drain.

  • Making black sugar pearls

    Place a pan on the stove, add 250g of black sugar and 70ml of winter melon tea into the pan.

    Stir well and cook the mixture over low heat until it turns dark brown, lightly boiling, bubbling slightly, and thickening, then turn off the heat.

    Pour the warm black sugar mixture over the cooked and drained pearls, mixing well to let the black sugar soak into the pearls.

    Add crushed ice into a cup, drizzle enough Milo sauce over the crushed ice to soak it. Add some black sugar pearls, a few pieces of Milo jelly, and flan on top.

How to prepare Milo with black tapioca pearls and brown sugar

  • Boil black tapioca pearls and coat with sugar

    Place a pot of water on the stove over high heat and bring to a boil, then add the black tapioca pearls to cook. While boiling, frequently use a pair of chopsticks to stir so that the tapioca pearls cook evenly and do not stick together.

    Boil the tapioca pearls for about 15 – 20 minutes until they puff up, become chewy, and float to the surface.

    After boiling the tapioca pearls, cover them and let them sit for 20 minutes to fully expand. Then, scoop the tapioca pearls out and place them in a bowl of cold water to drain.

    In a pot, add 50g of brown sugar with 50ml of water, cook over medium heat while stirring until the sugar dissolves.

    Once the sugar has completely melted, add the black tapioca pearls. Bring the pot of sugar water and tapioca pearls back to a boil, then cook for an additional 2 minutes, mixing well so that the sugar absorbs into the tapioca pearls, creating a thick mixture, then turn off the heat.

  • Cooking the cocoa milk mixture

    Dissolve 5g of tapioca starch into a small bowl with 1 tablespoon of plain water.

    Next, bring 200ml of unsweetened fresh milk and 200g of condensed milk to a boil over medium heat, stirring well until the condensed milk dissolves.

    When the milk starts to emit steam and slightly smoke, add 50g of cocoa powder and stir continuously to prevent clumps. Once the cocoa powder is completely dissolved, add a pinch of salt to the mixture and continue stirring for about 2 more minutes.

    Divide the cocoa sauce into 2 portions, pour one portion into a bowl, and leave the remaining part in the pot. Then, add the dissolved tapioca starch and stir continuously until the starch is evenly dissolved and the sauce thickens, then turn off the heat and let it cool in the bowl.

  • Put the ingredients into the glass

    After preparing the ingredients, you place them into the glass and arrange them so you can enjoy right away.

    Fill the glass with crushed ice, then slowly pour the liquid cocoa sauce over the ice to let it soak evenly. Next, scoop 1 tablespoon of thick cocoa sauce to cover half of the glass rim, and on the other half, add black sugar pearls.

    Sprinkle a little milo powder on top of the glass, decorate it with an oreo cookie and 2 sticks of cinnamon sticks to complete!

    • Boil tapioca pearls, coat with sugar

      First, place a pot of water on the stove and bring it to a boil over high heat for about 5 – 7 minutes. Once the water is boiling, add the black tapioca pearls and boil for 15 – 20 minutes.

      Every 5 minutes, use chopsticks to stir the tapioca pearls so they cook evenly and do not stick together.

      When the tapioca pearls are cooked, fully swollen, chewy and soft, and floating on the water’s surface, turn off the heat, cover the pot, and let the tapioca pearls sit for another 20 minutes to fully expand.

      After 20 minutes, transfer the tapioca pearls to a bowl of cold water and place them on a strainer to drain.

      In another pot, add 50g of brown sugar and 50ml of clean water and cook over high heat for about 1 – 2 minutes until the sugar dissolves.

      Next, add the drained tapioca pearls and cook until the sugar water comes back to a boil, then simmer for another 2 minutes.

      Stir well to let the sugar water soak into the tapioca pearls and the mixture thickens, then turn off the heat.

      Combine 200ml of unsweetened fresh milk with 200gr of condensed milk in a pot, then place it on the stove and cook over medium heat for about 2 minutes.

      Stir well to dissolve the condensed milk and when it starts to steam lightly, add 50gr of cocoa powder, stirring continuously to prevent clumping.

      Once the cocoa powder is completely dissolved, add 1/4 teaspoon of salt and stir for another 2 minutes.

      Next, divide the cocoa sauce into 2 portions; one portion should be scooped into a bowl, while the portion in the pot should have tapioca starch added. Stir well until the starch dissolves and creates a thick sauce, then turn off the heat and pour it into the bowl to cool.
