Activate the yeast
Put 175ml of warm unsweetened fresh milk into a bowl, add 30gr of sugar and 5gr of yeast. Stir well and let the yeast mixture rest for about 10 minutes.
Tip: The dough mixture after resting for 10 minutes if it meets the standard will have a fluffy layer rising on the surface. -
Mixing dough
Add 250g of all-purpose flour and 5g of salt into a bowl, mixing well so that the flour and salt are evenly combined.
Then create a small hole in the middle of the flour, add 20ml of cooking oil and the fermented yeast mixture into the bowl, stirring until the mixture sticks together.

Kneading dough
Place the dough on a flat surface, use your hands to knead for about 10 minutes until the dough forms a smooth mass, no longer sticky to your hands and can be stretched into a thin sheet.
Tip: The dough inside the bowl right after kneading will be very sticky, to easily take the dough out, you should apply a layer of cooking oil evenly on your palms and the outer surface of the dough, then take the dough out.

To stabilize the air fryer temperature, preheat the fryer for about 3 minutes at 180 degrees Celsius before placing the dough inside.
Once the fryer is sufficiently heated, place the baking tray inside and bake for 15 minutes at 165 degrees Celsius.
After 3 minutes of baking, open the fryer and spray a layer of water evenly; repeat this process 2 more times every 3 minutes.

Prepare the Ingredients
First, put in a large bowl: 125gr flour, 3gr yeast, 3ml rice vinegar, 5gr unsalted butter, 1 teaspoon of sugar, 1/4 teaspoon of salt and mix well.
Tip: Yeast will die or be less active when it comes into direct contact with salt, so you should mix the yeast with the flour first, then add the salt last!Next, slowly pour 85ml of filtered water into the bowl of flour, adding it gradually while stirring until the flour mixture becomes thick and smooth, forming a cohesive mass. Then, transfer the dough to the table and knead it with your hands.
First, fold the dough over, then use the palm of your hand to press and stretch the dough away (Folding and Stretching). Note that you should press and stretch the dough away, not press down. Next, rotate the dough mass by 90 degrees and repeat the two steps above for 3 minutes.
After that, cover the dough tightly and let it rest for 5 minutes so that it softens, making it quicker and easier to knead.
Once the dough has rested, continue to knead it until it becomes elastic, smooth, and can be stretched into a thin film.
How to tell if the dough is satisfactory:
- The dough is elastic and smooth, with good elasticity.

Preheat the air fryer at 35 degrees Celsius for 30 seconds, then turn it off and place the bread inside to let it rise for 40 – 50 minutes until the bread has puffed up.
Tip:
- The dough rising temperature must be below 35 degrees Celsius, otherwise, the yeast in the dough will die.
- You can also let the dough rise at room temperature; however, the rising time will be longer, about 1 hour and 30 minutes – 2 hours.
After proofing the dough, use a knife to make long cuts in the center of the bread, then spray some filtered water into the cuts.
Finally, add a little boiling water to the air fryer, place the bread rack in, and proceed to steam bake the bread at a temperature of 200 degrees Celsius for about 15 – 18 minutes.
Note:
- To prevent the bread from drying out, during the first few minutes of baking, we should open the lid quickly every minute and continuously spray water onto the bread.
- After a few initial minutes, when the top of the bread is golden, we continue to flip the bread over and bake the other side. Check regularly until the bread is evenly golden.
