How to make Mini Bread using an air fryer

  • Activate the yeast

Put 175ml of warm unsweetened fresh milk into a bowl, add 30gr of sugar and 5gr of yeast. Stir well and let the yeast mixture rest for about 10 minutes.

Tip: The dough mixture after resting for 10 minutes if it meets the standard will have a fluffy layer rising on the surface.

  • Mixing dough

Add 250g of all-purpose flour and 5g of salt into a bowl, mixing well so that the flour and salt are evenly combined.

Then create a small hole in the middle of the flour, add 20ml of cooking oil and the fermented yeast mixture into the bowl, stirring until the mixture sticks together.

  • Kneading dough

Place the dough on a flat surface, use your hands to knead for about 10 minutes until the dough forms a smooth mass, no longer sticky to your hands and can be stretched into a thin sheet.

Tip: The dough inside the bowl right after kneading will be very sticky, to easily take the dough out, you should apply a layer of cooking oil evenly on your palms and the outer surface of the dough, then take the dough out.

  • Shaping the dough

Divide the dough into equal pieces of about 10g.

Take the divided dough pieces, use a rolling pin to flatten them into long shapes, then use your fingertips to fold the edges and roll the dough. Adjust the shape of the dough to match your preference.

After shaping, let the dough proof for another 45 minutes to allow it to rise.

Next, use a razor blade to make a decisive cut on the back of the dough, then evenly spray a layer of water on the surface of the dough.

    Note:

    • Do not be too rough when shaping the dough as it may lose its rise when baking, resulting in less delicious bread.
    • The number of dough pieces should be suitable for the size of the fryer basket, with each piece spaced 2cm apart to allow the dough to expand.
    • It is advisable to dip the knife in cooking oil before cutting the dough to ensure the cuts are sharp and even. The cuts help the dough rise while baking.

To stabilize the air fryer temperature, preheat the fryer for about 3 minutes at 180 degrees Celsius before placing the dough inside.

Once the fryer is sufficiently heated, place the baking tray inside and bake for 15 minutes at 165 degrees Celsius.

After 3 minutes of baking, open the fryer and spray a layer of water evenly; repeat this process 2 more times every 3 minutes.

How to Make Mini Bread using an Air Fryer (recipe shared by a user)

  • Prepare the Ingredients

First, put in a large bowl: 125gr flour, 3gr yeast, 3ml rice vinegar, 5gr unsalted butter, 1 teaspoon of sugar, 1/4 teaspoon of salt and mix well.

Tip: Yeast will die or be less active when it comes into direct contact with salt, so you should mix the yeast with the flour first, then add the salt last!

Next, slowly pour 85ml of filtered water into the bowl of flour, adding it gradually while stirring until the flour mixture becomes thick and smooth, forming a cohesive mass. Then, transfer the dough to the table and knead it with your hands.

First, fold the dough over, then use the palm of your hand to press and stretch the dough away (Folding and Stretching). Note that you should press and stretch the dough away, not press down. Next, rotate the dough mass by 90 degrees and repeat the two steps above for 3 minutes.

After that, cover the dough tightly and let it rest for 5 minutes so that it softens, making it quicker and easier to knead.

Once the dough has rested, continue to knead it until it becomes elastic, smooth, and can be stretched into a thin film.

How to tell if the dough is satisfactory:

    • The dough is elastic and smooth, with good elasticity.
    • The dough does not stick to your hands: when pressed, it feels slightly sticky, but when you lift your finger, the dough does not stick.
    • The dough can be stretched into a thin film without tearing.
    • Check the dough with the Windowpane test. Break off a piece of dough and stretch it out. If the dough forms a thin membrane that is not easily torn and light can pass through, it is satisfactory.

  • Shaping the dough

Use a bit of cooking oil to grease the surface of the table or cutting board to prevent sticking, place the dough on it and divide it into equal parts, then roll them into balls and let the dough rest for another 5 minutes.

Next, roll each dough ball into a thin, long shape and then roll it up, pinching the edges tightly to make the bread puff up nicely. Repeat this process until all the dough balls are used up.

  • Baking the bread

Preheat the air fryer at 35 degrees Celsius for 30 seconds, then turn it off and place the bread inside to let it rise for 40 – 50 minutes until the bread has puffed up.

    Tip:

    • The dough rising temperature must be below 35 degrees Celsius, otherwise, the yeast in the dough will die.
    • You can also let the dough rise at room temperature; however, the rising time will be longer, about 1 hour and 30 minutes – 2 hours.

After proofing the dough, use a knife to make long cuts in the center of the bread, then spray some filtered water into the cuts.

Finally, add a little boiling water to the air fryer, place the bread rack in, and proceed to steam bake the bread at a temperature of 200 degrees Celsius for about 15 – 18 minutes.

    Note:

    • To prevent the bread from drying out, during the first few minutes of baking, we should open the lid quickly every minute and continuously spray water onto the bread.
    • After a few initial minutes, when the top of the bread is golden, we continue to flip the bread over and bake the other side. Check regularly until the bread is evenly golden.

What is yeast?

  • Yeast is an important ingredient in the bread-making process, as it contains living microorganisms that secrete substances to speed up the fermentation of the dough, allowing the bread to rise.
  • There are three types of yeast: fresh yeast, dry yeast, and instant yeast. You can easily find these types of yeast at bakeries or purchase them on e-commerce websites.
  • When buying, you should pay attention to the expiration date and packaging quality to ensure the yeast is still fresh and active when used.

What is all-purpose flour?

  • All-purpose flour is a type of ingredient commonly used to make a variety of baked goods, depending on the type of bread, the amount of flour needed may vary or be used in combination with other flours if necessary.
  • All-purpose flour is made from two types: soft winter wheat and hard spring wheat, with a protein content ranging from 10% to 12%.
  • Additionally, all-purpose flour comes in bleached and unbleached varieties, but usually, bleached flour is used for making bread and pastries.
  • You can easily find all-purpose flour in supermarkets, grocery stores, markets, baking supply shops, and reputable e-commerce websites in the market.

Some notes when making mini bread

  • After use, the yeast should be placed in a sealed glass or plastic container and stored in the fridge refrigerator to avoid frequently opening the lid. The yeast is good for use within 6 months and should not be used after expiration to make bread.
  • Once baked, the bread can be placed in a tightly sealed bag or zip bag to keep it from getting soggy and maintain its crispness. It is advisable to use the bread within 2 – 3 days to keep it soft and crispy; if kept too long, the bread will harden.
  • Choose the appropriate tools; if you do not have an oven, you can opt for an air fryer from brands like BlueStone air fryer, Philips, Tefal,…
