    Add 10g of cocoa powder to 60g of condensed milk and mix well, then continue to add 100g of whipping cream and stir for an additional 1 – 2 minutes until the mixture is well combined.

    Then, pour the mixture into a blender and blend for about 3 – 4 minutes until the cream thickens, then pour it into an ice tray and place it in the freezer of the refrigerator for about 3 – 4 hours until the cream is solidified.

  • Mixing and steaming the dough

    Place a pot on the stove, pour in 220ml of fresh milk (unsweetened) and 30gr of condensed milk, then add 2 teaspoons of cooking oil, and stir well for about 3 minutes over low heat until the milk dissolves and is warm, then turn off the heat.

    Pour the milk mixture into 150gr of glutinous rice flour and mix well, then strain it through a sieve until smooth. Once the mixture is smooth, pour it into a pot for steaming for about 10 minutes until the mixture becomes clear, and taste to ensure there is no raw flour smell.

  • Kneading the dough

    Place the steamed dough mixture on a flat surface like a tray or cutting board, and sprinkle 50gr of cornstarch on the dough to help cool it quickly.

    Once the dough has cooled, knead it evenly until it becomes stretchy, with a relatively smooth surface that does not stick to your hands. Divide the dough into 2 parts, one part will be kneaded with 15gr of cocoa powder for about 5 minutes to achieve an even color.

  • Shaping the cake

    Take the hardened cream out.

    Divide the dough into equal parts, use a rolling pin to flatten the dough, then place a scoop of cream in each part and wrap it up, removing any excess.

    After wrapping, place the cakes in the freezer for about 3 – 4 hours, then take them out and let them sit at room temperature for 5 – 10 minutes before eating.

    Note: The cream melts very quickly, so shape about 2 cakes in succession before putting them in the freezer immediately.

How to successfully make mochi
