How to choose delicious ripe durian
- You should choose durians with a strong characteristic aroma and those with slightly rounded spikes and evenly sized green spikes.
- Choose durians that, when held and shaken lightly, produce a “thump thump” sound when tapped with a stick; these are good fruits, with thick and firm flesh.
- Do not choose durians that show no sap when you press your fingernail into the stem, as these are durians that have been soaked in chemicals.

How to make durian cream mochi
-
Make the filling
Add whipping cream to a large bowl, use a whisk to beat at medium speed for about 1 minute, then add 1 tablespoon of sugar, continue beating until the whipping cream stiffens and peaks form, then keep it chilled until use.
Peel the durian and scoop out the flesh into a bowl, use a fork to mash it until smooth, then keep it chilled until use.
-
Mixing mochi dough
Add to a bowl and mix all the ingredients including: 130g of glutinous rice flour, 30g of cornstarch, 65g of sugar, 1/2 teaspoon of salt, and 200ml of unsweetened heated milk.
Use a whisk to mix well, then add 20ml of gardenia juice and strain through a sieve for a smooth texture.
-
Steaming and kneading the dough
Next, prepare a pot of steaming water and bring it to a boil on the stove, then place the bowl of dough in the steamer for about 30 minutes.
Once the dough is steamed, mix in 20g of unsalted butter in the bowl, then wrap the dough in plastic wrap for easier kneading. Use a rolling pin to roll the dough several times in both horizontal and vertical directions. Then knead by hand for about 5 minutes to make the dough smoother and more elastic.
After kneading the dough, roll it into a long log and store it in the freezer for 45 minutes to harden the dough, making it easier to wrap the cakes.
-
Shaping the Cake
Take the dough for the cake out of the refrigerator, cut it into bite-sized pieces about the thickness of a finger.
Sprinkle a little cornstarch on a clean surface, then take a portion of the dough and roll it into a thin round shape.
Next, scoop 1 teaspoon of whipping cream and then 1 teaspoon of durian onto the piece of dough.
Wrap the cake into a round shape, pinch the edges of the dough tightly together and place it on a parchment paper mold to finish.
