Every year during the Mid-Autumn Festival, family members gather together to enjoy mooncakes with a hot cup of tea. To make this year’s full moon Tet Holiday more special, let’s cook with TasteVN to make salted egg yolk mooncakes using an air fryer right at home!

Ingredients for Salted Egg Yolk Mooncakes using an Air Fryer For 8 mooncakes

Cake flour 100 gr (or all-purpose flour type 8) Baked mooncake syrup 36 gr Coconut rice filling 80 gr Lotus seed filling 80 gr Salted egg yolk 70 gr (7 pieces) Chicken egg yolk 1 piece Custard powder 40 gr Gelatin powder 8 gr Milk powder 35 gr Powdered sugar 35 gr Unsalted butter 101 gr Condensed milk 95 gr Coconut milk 4 tablespoons Mai Que Lo liquor 100 ml Cooking oil 10 ml

What is cake flour?

  • Cake flour, often referred to as flour type 8, is made from finely ground soft wheat, with a high starch content and very low protein content, only about 7 – 8.5%. Visually, the flour is always in a fine form with tiny particles.
  • Cake flour is commonly used to make light, fluffy cakes such as chiffon, cupcake, or types of Taiwanese sponge cake, Japanese cakes, etc.

What is custard powder (lion powder)?

  • Custard powder, also known as lion powder, lion flour, or filling powder, is primarily made from corn starch, chicken eggs, etc., resulting in a very fine, ivory-colored powder.

  • Custard powder is often used to enhance the flavor and increase the rich creaminess characteristic of baked goods. It can easily be found in molten egg fillings, soft sponge cakes, etc.

How to make salted egg yolk mooncake using an air fryer

  • Prepare and bake salted eggs

    First, take a bowl and add 7 salted egg yolks along with 100ml of rice wine, soak for 10 – 15 minutes, then strain out the wine.

    Next, use a small brush to evenly apply 10ml of cooking oil over all the salted eggs, then place them in the air fryer and bake at 200 degrees Celsius for 5 minutes, until the salted eggs are opaque and cooked.

    After that, place each salted egg yolk on a sieve, then use a spoon to gently press and mash them until smooth.

  • Making the molten salted egg yolk filling

    Next, take a bowl, add 8g of gelatin powder and 20ml of water, use a spoon to stir well and let the gelatin bloom for about 10 – 15 minutes. Then, proceed to melt it until the gelatin becomes a smooth mixture.

    Continue by preparing a bowl for 7 salted egg yolks that have been sifted, 60g (about 4 tablespoons) of condensed milk, 4 tablespoons of coconut milk, 20g of custard powder, 35g of powdered sugar, 35g of milk powder, 65g of unsalted butter, and the melted gelatin, using a ladle to stir well to combine the mixture.

    At this point, take a blender and add the salted egg yolk filling mixture, blend at medium speed for about 3 – 5 minutes until the mixture is smooth, then turn off the machine.

    After blending until smooth, you should strain it once more and then put it into a piping bag to pipe into small ice cube molds, place it in the freezer for 2 hours.

  • Wrap the salted egg yolk filling

    After preparing the salted egg yolk filling, divide 80g of lotus seed filling and 80g of coconut rice filling into portions weighing 20g each.

    Next, use your hands to shape the filling into thin round pieces, add the salted egg yolk filling, and then roll them into beautiful round balls.

    Continue like this until all the salted egg yolk filling is used up! Finally, place them in the freezer for 2 hours.

  • Mix the cake dough

    Take a bowl and add 36g of unsalted butter, then use an electric mixer to beat it until smooth and creamy.

    Next, add 35g of condensed milk, 36g of baking syrup, and sift in 100g of cake flour No. 8 along with 20g of custard powder.

    Mix the dough until it becomes a cohesive, sticky mass, then wrap it in plastic wrap and refrigerate for about 90 minutes.

  • Divide the dough and wrap the filling

    Then, take the dough out of the refrigerator and divide it evenly into portions weighing 20 grams each.

    Use a rolling pin to flatten the dough, then place the prepared filling in the center and pinch the edges of the dough to seal the filling. Continue doing this until all the dough and filling are used up!

  • Pressing the mold and baking the cake

    You prepare the mooncake mold and then press each piece of dough into the mold to shape it, then place it in the fridge for an additional 90 minutes.

    Next, take the cake out and put it in the air fryer to bake at a temperature of 180 degrees Celsius for 5 minutes, then remove it to cool, while using a brush to apply a thin layer of beaten egg yolk over the entire surface of the cake.

    Finally, continue to put it back in the air fryer to bake at a temperature of 170 degrees Celsius for about 5 minutes, then take the baking tray out, flip it over to bake the other side of the cake at a temperature of 170 degrees Celsius for another 5 minutes, until the cake is evenly golden brown.

    Tip: To prevent the cake from drying out, you should lightly spray a layer of water on the surface of the cake before baking!
