  • It is advisable to choose chicken breast pieces with white skin, as these are larger chickens with tastier and firmer meat; younger chickens tend to have more tender meat.
  • If you buy skinless chicken breast, observe the layer of fat on the chicken meat. You should choose pieces with white fat for better taste.
  • Choose pieces of breast with fewer striations in the meat fibers. The more stripes there are, the less fat and protein there will be; furthermore, these stripes will make the chicken meat harder to absorb spices and sauces during cooking.

    Add 40g of unsalted butter, 13g of peanut butter, and 1 tablespoon of diet sugar into a bowl, then use a flat whisk to mash until smooth.

    Next, add 1 egg yolk, 2 teaspoons of unsweetened almond milk, and continue to mix well.

    Then, add 115g of almond flour and mix until the dough sticks together to form a smooth and pliable mass.

    Finally, wrap the dough tightly with plastic wrap and let it rest in the refrigerator for 15 – 20 minutes.

  • Prepare the ingredients for the cake filling

    Rub the chicken breast with salt, then rinse thoroughly with water and let it drain.

    Place a pan on the stove, add 20g of white sesame seeds, and toast over medium-low heat until golden and fragrant.

    Next, chop the following nuts: 25g of almonds, 50g of walnuts, 10g of cashews, 20g of peanuts, 20g of macadamia nuts, and 20g of pine nuts.

  • Making the filling

    Add 200g of chicken breast, 1/4 teaspoon of five-spice powder, 1/4 teaspoon of annatto powder, 1/2 teaspoon of sugar substitute, 1/2 tablespoon of fish sauce, and 1/2 tablespoon of sesame oil into a bowl. Mix well to ensure the chicken absorbs the spices and marinate for 30 minutes.

    Put a pot on the stove, add the marinated chicken, a little water, and cook over medium heat until the chicken is done.

    Once the chicken is cooked, use your hands to shred the chicken into small strands. Then, use chopsticks to stir well so that the chicken absorbs the remaining spices in the pot.

    Next, place a pan on the stove, add the chicken, and stir over low heat until the moisture evaporates.

    Note: Only stir until the chicken is dry, do not stir too long as it will make the chicken lose its tenderness and taste.

    Add finely chopped nuts, 65g of diced chicken, toasted sesame seeds, 1 tablespoon of shredded kaffir lime leaves, 1/2 tablespoon of sugar substitute, 2 teaspoons of Mai Quế Lộ wine, 1/4 teaspoon of five-spice powder, and 20ml of water into a bowl. Mix well to combine the ingredients.

    Next, add 60g of peanut butter to the bowl and continue mixing until the filling binds together.

    Divide the dough for the crust and the filling into several parts with a ratio of crust 20gr : filling 30gr, then roll them into balls.

    Preheat the oven to 180 degrees for 15 minutes.

    Mix together 1 egg yolk, 1 teaspoon of unsweetened almond milk, 1/2 teaspoon of sesame oil, and 1 drop of red food coloring.

    Then, brush a thin layer of the mixed egg yolk on the surface of the cake. Next, bake the cake for 20 – 25 minutes at 180 degrees Celsius.
