How to process Chinese Mugwort Dessert

Extract mugwort juice
Gradually add small amounts of mugwort leaves into the juicer along with a little water.
Do this step by step until you obtain mugwort juice.

Mix the flour
Add the tapioca flour and rice flour into the mugwort juice and stir well.

Steam the flour
Steam half of the mixed flour for about 10 minutes.
Then add the remaining half of the flour mixture into the steaming tray and continue steaming.

Cut the mugwort flour into strands
After steaming the flour, let it cool completely, waiting about 3 – 4 hours or longer.
Proceed to take the flour out of the steaming tray, making sure to rub tapioca flour on your hands, the surface of the mugwort flour, and other utensils to prevent sticking.
Cut the mugwort flour into many small strands, about 15 cm long.

Boil the mugwort flour strands
Blanch the mugwort flour strands briefly in boiling water until they turn translucent, then scoop them out into a bowl.

Make the syrup
Add pandan leaves to a pot of water and boil to extract the fragrance.
Continue to add thinly sliced ginger and rock sugar to cook until the sugar is completely dissolved.

Enjoy
Pour roasted sugar into a bowl of pre-blanched mugwort leaves, sprinkle with a bit of white sesame seeds, and enjoy.
