How to make Nama chocolate caramel
-
Cut the ingredients
Chill 120gr of chocolate and 15gr of butter in the refrigerator until firm. Then cut the unsalted butter into small pieces and chop the chocolate.
-
Cook the caramel butter mixture
Put 50gr of sugar, 1gr of salt, 80ml of unsweetened fresh milk, 10ml of honey, and 15gr of unsalted butter into a pot. Place the pot on the stove, turn on medium heat, and stir continuously until the ingredients dissolve into a homogeneous liquid mixture.
When the mixture starts to boil, add 100ml of heavy cream, stirring well until the mixture thickens and turns a brown color.
-
Pour into mold and chill for the first time
Prepare a mold lined with non-stick parchment paper.
When the mixture has turned a brown color, pour it immediately into the mold. Spread the caramel mixture evenly across the surface, and wait for it to cool completely.
Wrap the mold tightly with plastic wrap and place it in the refrigerator for 1 hour.
-
Dissolve chocolate with heavy cream
Put chopped chocolate into a bowl.
Boil 100ml of heavy cream and pour it into the bowl of chocolate, stirring well to melt the chocolate and blend it with the heavy cream into a smooth mixture.
-
Pour into molds and chill for the second time
Take the caramel mixture out of the refrigerator and pour it into the chocolate mixture, gently tapping the mold to level the chocolate.
Cover the mold tightly again and chill for an additional 3 hours.
-
Cut nama
After 3 hours, take the nama out, remove the non-stick parchment paper, and place the nama block on a clean cutting board.
Use a knife that has been soaked in boiling water for about 1 minute to cut the nama into small bite-sized cubes.
Tip:- Place parchment paper on the cutting board to prevent the nama from sticking.
- Heating the knife makes it easier to cut the nama.
-
Final Product
The nama chocolate is soft and smooth, with a chewy caramel that has a buttery aroma. The two layers of cake blend together to create an incredibly appealing and unique sweetness.
