Cashew nut sticky rice cake is quite a unique dish that is less common than traditional sticky rice cake. However, this dish will captivate anyone from the very first taste thanks to its delicious, chewy, and sweet flavor. Sticky rice 3 kg Cashew nuts 1.5 kg Pork belly 500 gr Common spices a little (salt/ sugar/ ground pepper)

How to choose fresh ingredients

How to choose good sticky rice for wrapping cakes

  • It is advisable to choose sticky rice grains that are uniformly large, opaque white, shiny on the outside, and have no broken grains.
  • Good sticky rice will have a natural, distinctive aroma, and when tasted, it will have a slight sweetness. Additionally, you can choose well-known sticky rice brands to ensure quality.
  • Do not choose sticky rice grains that are dusty, have fuzz, or are yellow in color, as these are low-quality sticky rice that affects the flavor of the cake.

How to choose good cashew nuts

  • It is advisable to choose cashew nuts that are uniformly sized, with a bright ivory color, and have a crunchy and dry texture.
  • Good cashew nuts do not need to be large but must be whole, not broken, firm, and narrow.
  • Avoid choosing cashew nuts that show signs of being hollow, as these are low in nutrients and of poor quality.

How to choose good pork belly

  • You should choose pieces of meat that have a balanced ratio of fat to meat, with a fat layer thickness of 1.5cm – 2cm, and the lean meat tightly adhered to the fat. To achieve the best flavor for the cake, you should select pieces with slightly more fat than lean meat.
  • Pay attention to the color of the pork; good pork belly has dry skin on the outside, a pinkish-white color, and is tender. After cutting, the meat should be bright pink with firm fibers. The fat between the meat should be bright white and firm.
  • Press the meat with your hand; if the dent returns to its original state quickly, then that is good pork.
  • Do not buy if the meat has an unusual smell or a dark red color.

How to prepare Cashew Sticky Rice Cake

  • Soak the ingredients

    Wash the glutinous rice thoroughly with water and soak it for about 9 hours. After soaking, take the rice out, rinse it under running water, and let it drain.

    After washing the cashews with water, soak them in a little salt for about 2 hours, then take them out basket and let them drain.

  • Prepare and marinate the meat

    Clean the pork belly by scraping off the skin, then rub the meat with a little salt for about 5 minutes and rinse it clean. Next, cut the meat into strips about the thickness of a finger.

    Marinate the meat with 2/3 spoons of salt, 1/2 tablespoon of sugar, and 1/2 teaspoon of ground pepper for about 30 minutes to allow the meat to absorb the seasoning.

  • Wrapping the cake

    First, lay 2 banana leaves crosswise on top of each other. Then scoop 1 bowl of prepared sticky rice on top and spread it evenly vertically.

    Next, add a moderate amount of cashew nuts on top of the sticky rice and place 2 – 3 pieces of pork belly on it. Wrap the cake tightly so that it forms a neat cylinder and then tie it with string.

    Repeat the same process with the remaining cakes until all the ingredients are used up.

  • Boil the cake

    Arrange the cakes in a pot, lining the bottom with about 2 – 3 banana leaves, add water, and boil the cakes over medium heat for about 4 hours.

    Tip:
    • Lining the pot with banana leaves will prevent the cakes from burning.
    • While boiling, make sure to check frequently and add water to prevent the water from evaporating and causing the cakes to burn.

  • Wash and dry the cake

    After boiling, take the bánh tét out and wash the cake with cold water for about 3 – 5 minutes, then let it dry (3 – 4 hours) and it will be ready to use.

    The finished bánh tét cashew nut looks extremely attractive and unique. The sticky, fragrant glutinous rice, creamy cashew nuts blended with well-marinated pork belly create a perfect bánh tét for the spring festival.
