Make the cheesecake base
First, separate the oreo cookies to get the cookie crust (only use the crust, do not use the cream), then grind the cookie crust or crush it finely.
Next, steam 25g of unsalted butter, add it to the ground oreo crust and mix well.
Then, place a round mold on a plate, add the oreo mixture, and use a glass to press down hard to compact the crust. Finally, put the mold in the freezer refrigerator for 15 minutes.

Mix the passion fruit mixture
Stir 30gr of gelatin powder with 100ml of cold water and soak for 10 minutes for the gelatin to swell. After 10 minutes, steam the gelatin until it melts.
Cut the passion fruit in half, scoop out the pulp, and mix with 100ml of boiling water. Next, use a spoon to stir and press hard to extract the juice from the passion fruit, you will obtain 200ml of passion fruit juice.
Next, put 130ml of passion fruit juice and 1/3 of the melted gelatin into a bowl and mix well.

Whip the passion fruit cream mixture
In a large bowl, add 200gr of whipping cream, 30gr of sugar, and use a mixer at medium speed until the cream is soft and fluffy, forming peaks that bend downwards.
In another bowl, add 100gr of cream cheese, 20gr of sugar, and use a mixer until the mixture is smooth and the sugar is completely dissolved.
Next, add to the cream cheese bowl: the passion fruit mixture, whipped cream, and mix everything together on low speed for about 1 minute until well combined.

Pour the cake into the mold
Pour the passion fruit cream mixture into the prepared cake base and place it in the refrigerator for 2 – 3 hours for the cream to set.
In a bowl, combine 70ml of passion fruit juice, the remaining gelatin, and stir well. Once the cake has set for 2 hours, take it out and pour the passion fruit sauce over the top, sprinkling a little passion fruit seeds on top.
Continue to place the cake in the refrigerator for another 2 hours before enjoying.
Tip: To remove the cake from the mold, use a warm towel wrapped around the mold, hold it steady for about 30 seconds, and then slowly separate the mold from the cake. -
