How to choose fresh and delicious octopus
- Fresh octopus has clear eyes, a bright white belly, firm flesh, smooth and shiny skin, and moves quickly and flexibly.
- Limit choosing those with cloudy eyes, flesh that is off-white, and mushy.
- For frozen octopus, choose those with clear eyes, a brown-gray color with a greenish tint, and bright white flesh. Especially avoid those with swollen bodies as they have been stored for a long time, making their taste less fresh than fresh octopus.
- You can buy octopus at reputable places that specialize in fresh octopus or at markets to avoid mistakenly choosing those soaked in chemicals and stored overnight. How to prepare Octopus dipped in vinegar

Prepare the ingredients
Soak the octopus in a little diluted salt water and then rinse it clean with fresh water. You can leave it whole or cut it into smaller pieces for easier use.
Peel the onion, cut it in half, and then slice it into small rings to cook the vinegar water. Clean the scallions and cilantro, then cut them into sections, keeping the green onion tops separate for making the vinegar water.
How to prepare octopus without a fishy smell
- To eliminate the fishy smell of octopus, cut off the eyes, ink sac, and internal organs, and rinse thoroughly with clean water.
- Rub the octopus with a mixture of salt, ginger, or vinegar, and then rinse several times with water.

Make the dipping sauce
Pound the green chili finely and place it in a small bowl.
Then add 1 teaspoon of sugar and 1 teaspoon of salt, along with 1 teaspoon of lemon juice, and stir well with a spoon to create a delicious dipping sauce.

Cook the broth
Pour filtered water into a pot and add vinegar in a 1:1 ratio, then bring to a boil.
Once boiling, add the chopped onion, along with the green onion tops and sautéed onions, and bring to a boil again.
