  • Choose kumquats with smooth skin, round and shiny, not rough.
  • Prefer kumquats that feel heavy; avoid large but light kumquats, as they will have more water.
  • Avoid overly yellow kumquats, as squeezing them will give a slightly rotten smell, affecting the taste of the drink.

How to choose lemongrass for peach tea

  • Choose small lemongrass stalks, with tightly wrapped layers, and the outer leaves covering the younger ones inside. The lemongrass leaves should not be dry or wilted.

  • Prepare lemongrass

    Wash 10 stalks of lemongrass, remove the old outer layers.

    Take 2 stalks, cut them into pieces about 1 – 2 finger joints long, then crush them. Take another 4 stalks of lemongrass and cut them diagonally into thin slices. Keep the remaining lemongrass stalks whole and crush them.

  • Cook tea with lemongrass

    Boil about 500ml of water in a pot and bring it to a boil. Add the crushed lemongrass, and cook for 5 minutes to allow the lemongrass essential oils to infuse the water.

    Next, add 2 sachets of green tea and boil for another 2 – 3 minutes to fully extract the tea flavor.

    Strain the tea to collect the liquid and discard the solids. You should obtain about 400ml of lemongrass tea.

    In each cup, scoop out about 2 ladles of tea, then add the diagonal-cut lemongrass and stir in 2 tablespoons of sugar.

    Next, squeeze the juice of 2 calamondin fruits into the tea, add 4 tablespoons of marinated peach water, and stir well.

    Finally, add ice to the tea cup, place pieces of marinated peach on top, and garnish with 2 smashed lemongrass stalks to complete.
