How to make Pecan Pie

  • Make the crust

    Sift 272g of all-purpose flour and a pinch of salt into a bowl. Next, add 142g of cold unsalted butter cut into small pieces, and use your hands to mix the butter with the flour.

    In another bowl, dissolve 4 tablespoons of cold water and 2 egg yolks, then pour into the flour bowl and mix well.

    Transfer the mixture to a countertop and knead by hand until it forms a dough. Wrap the dough in plastic wrap and refrigerate for 30 minutes.

  • Arrange the pan and bake for the first time

    After chilling, place the dough on the countertop and use a rolling pin to roll it into a circle about 1/3 inch thick.

    Place the dough in a round pan, using a knife or scissors to trim the excess dough. To make the pie look more attractive, use your hands to create a wavy edge for the crust.

    Next, place a layer of parchment paper on the crust and add about 500g of beans (any type you prefer) and spread them evenly. This method will help prevent the crust from puffing up while baking.

    Put the crust in the oven at 180 degrees Celsius for 15 minutes. Remember to preheat the oven for 15 – 20 minutes before baking to ensure the temperature is stable.

    Add 150g of pecans, 246g of corn syrup, 3 eggs, 200g of sugar, 28g of unsalted butter melted, 1 teaspoon of vanilla extract, and 1/2 teaspoon of salt into a bowl and mix well using a whisk.

    When the crust has finished baking, remove all the beans and parchment paper, and pour the filling into the center of the pie. Next, arrange the remaining 100g of pecans on top of the pie for decoration.

    Finally, place the pie in the oven for 20 minutes, then cover the top with aluminum foil and bake for another 40 minutes until done.

Maple syrup

  • Maple syrup is produced from the sap of the sugar maple (Acer saccharum), red maple, or black maple trees.
  • This type of syrup has a thick, somewhat viscous texture similar to honey, and is often used for baking, drizzling over desserts, or marinating ingredients for roasting and frying in food preparation.
  • You can find it at specialty import stores, large supermarkets, or on e-commerce websites. In this recipe, you can substitute maple syrup with honey.

How to Make Chocolate Pecan Pie

  • Mix the pie crust dough

    First, place 200g of all-purpose flour, 100g of cold unsalted butter, and a pinch of salt into a bowl, then use a pastry cutter to blend the butter and flour until fine.

    Next, gradually add 2 tablespoons of cold ice water and quickly knead the dough with your hands until it forms a smooth, pliable ball.

    Finally, shape the dough into a ball and wrap it tightly in plastic wrap, letting it rest in the refrigerator for 15 – 20 minutes.

    Tip: To prevent the butter from melting, you should knead the dough quickly! If the butter shows signs of melting, let the dough rest in the freezer for about 5 minutes before continuing to knead.

  • Arrange the mold and bake the crust

    Preheat the oven to 180 degrees Celsius for 15 minutes.

    Once the dough has hardened, take it out and use a rolling pin to roll it out so that the radius is about 3 large finger widths larger than the mold.

    Next, place the dough on the pie mold and press it down firmly with your hands to compact it into the bottom and sides of the mold. Then, use a knife to cut off the excess dough and poke holes evenly on the surface with a fork.

    Tip: To prevent the crust from puffing up and cracking while baking, remember to poke the surface of the dough evenly with a fork!

    Finally, cover the surface of the dough with a sheet of parchment paper, and evenly sprinkle a layer of soybeans for insulation. Bake the crust for the first time at 180 degrees Celsius for 12 – 15 minutes.

    Then, remove the parchment paper and the beans, and continue to bake the crust for an additional 5 minutes.

    Tip: To prevent the top of the pie from burning during the initial baking phase, cover it with a layer of beans (soybeans, red beans, black beans,…) or baking weights!

  • Make the chocolate filling

    Add 90g unsalted butter and 200g dark chocolate to a bowl, then place this bowl over a pot of boiling water and stir until the mixture is completely melted and smooth.

    In another bowl, add 100g brown sugar, 2 eggs, 175ml maple syrup, 1/8 teaspoon five spice powder (optional) and mix well until combined.

    Next, gradually add the chocolate butter mixture into the egg bowl while stirring until the mixture is smooth.

    Place 1/2 of the pecan nuts on the surface of the pie crust, then pour all the chocolate filling into the mold. After that, continue to decorate the top with the remaining pecan nuts and bake the pie at 180 degrees Celsius for 35 minutes.
