How to choose fresh and delicious eel
- When buying eel, choose those that are still alive and of moderate size. Eels have two distinct colors, the back is black, and the belly is yellow; these are naturally caught eels from rivers or streams, and their meat will be firmer and tastier than farmed eels.
- If you cannot buy natural eel, choose farmed eel with a black belly; larger ones will be tastier.
- Avoid eels with strange colors or pale green, as well as soft and mushy meat, as they may be sick or dead eels.
How to prepare Braised Eel with Pepper

Prepare the eel and other ingredients
Green onions are washed and chopped. Shallots are peeled, washed, and minced.
Garlic is peeled and minced. Chili is chopped.
To clean the slime off the eel, cut off the head and internal organs, then rub salt on the eel for about 10 minutes and rinse well with water several times.
Methods to clean eel of slime and eliminate the fishy smellMethod 1: Place the eel in a plastic bag with coarse salt, massage thoroughly for about 2 minutes, then rub off all the slime and rinse with lemon juice. Next, rinse well with clean water and let it dry.
Method 2: Use lemon juice or rice washing water to rub off the slime on the eel’s body; when you feel the eel is clean, gut it, remove the internal organs, and rinse again with diluted salt water.
Method 3: If you have ash from the stove, rub it on the eel and wipe off the slime several times with the ash. Finally, rinse with clean water.
Method 4: Place the eel in the freezer for about 2 hours; when preparing, take the eel out to soak in cold water, then use a mesh cloth to gently wipe over the body of the eel several times to remove the slime.

Marinate the eel
Mix the eel with 1 teaspoon of salt, 1 teaspoon of seasoning powder, 1/2 tablespoon of sugar, 1/2 teaspoon of monosodium glutamate, 1 teaspoon of fish sauce, 1 teaspoon of ground pepper, a little minced garlic, a little chopped green onion, and 1 tablespoon of soy sauce.
Marinate the eel for 15 – 20 minutes to allow it to absorb the spices.

Cook the eel
Add 2 tablespoons of cooking oil to the pot, turn on the heat to medium, then add minced garlic and minced shallots and sauté until fragrant. Next, pour the eel into the pot and stir until it is firm.
Then, add a little water to just cover the eel, bring to a boil and then lower the heat, stirring occasionally while cooking.
Cook until the eel is nearly dry, then season to taste, add chopped green onion, minced chili, and 2 teaspoons of ground pepper, simmer a bit longer until the sauce thickens slightly, then turn off the heat.
