Make the cake filling
First, soak 70g of peeled mung beans in water for about 2 hours, then rinse thoroughly.
Next, place the mung beans in a pot with 100g of sugar, 1/2 teaspoon of salt, and 250ml of water, then cook over medium heat.
When the mung beans boil, skim off the foam and continue to cook for another 20 minutes until soft, when the mixture is thick and water is reduced, turn off the heat and let it cool.

Blend pandan leaf extract
Wash the pandan leaves with water, cut them into pieces about the size of a finger. Then, place the pandan leaves in a blender with 70ml of water and blend until smooth.
After that, use a sieve to filter out the concentrated pandan leaf extract and discard the leftover pulp.

Making the cake dough
Fresh coconut meat should be washed with salt water, then rinsed with clean water and chopped into small pieces.
Next, put 200g of tapioca flour, 70g of sugar, 1/2 teaspoon of salt, 60ml of pandan leaf extract, and 40ml of water into a bowl.
Stir well until the sugar and flour are completely dissolved. Then, add all the chopped coconut meat, mix well and let the dough rest for about 40 minutes.
Next, pour the flour mixture into a pot, place it on the stove, and stir continuously over medium-low heat until the dough turns translucent but is not fully cooked, then turn off the heat and let it cool for about 10 minutes.
