How to Prepare Green Mango and Pig Ear Salad

  • Prepare the Ingredients

    Clean the pig ears, scrape off hair and any dirty membranes. Wash with lemon or vinegar and then use a little liquor to eliminate the odor.

    Wash the carrot, drain and shred it, soak in sugar for 15 minutes to reduce the pungency. Then squeeze out the water. Shred the green mango and carrot. Roast the peanuts until cooked and crush them. Cut the Vietnamese balm and rice paddy herb into small pieces. Mince the garlic and chili.
