Prepare the papaya
Peel the green papaya, wash it clean, and cut it into 4 parts lengthwise. Then shred it into long, thin strands suitable for eating.
Soak all the shredded papaya in a bowl of diluted saltwater, using your hands to mix and squeeze several times for about 2 minutes. Rinse with clean water, then drain in a basket to remove excess water.
Spread the shredded papaya evenly on a tray and sun-dry for about 3 – 4 hours.
Tip: If you have time, you can sun-dry the papaya longer, which helps make the strands of papaya much more chewy and delicious.

Pound together a mixture of 3 chili peppers, 4 cloves of garlic, and 3 teaspoons of sugar. Add 200ml of fish sauce, stir well to combine.
