How to choose fresh pandan leaves for ice cream

How to make Pandan Leaf Ice Cream

Blend and filter pandan leaf water
First, the pandan leaves should be cut at the base with a knife, washed clean, and then chopped finely. Then, put them in a blender with 250ml of sweetened fresh milk and blend at medium speed for about 3 – 5 minutes.
Once the mixture is smooth and creamy, turn off the machine and strain the juice using a clean cloth or a sieve!
Tip:- To get a beautiful green color and reduce bitterness, soak the pandan leaves in warm water for about 5 – 10 minutes before blending.
- If you don’t have a blender, you can crush the pandan leaves into a paste, mix and squeeze with water, then strain again.

Mix the egg mixture with sugar
Next, prepare a bowl and add 3 eggs, 4.5 tablespoons of sugar, 1/2 teaspoon of vanilla essence, and 2 tablespoons of corn syrup into it.
Use a whisk to beat the mixture until it is dissolved, forming a light yellow, smooth mixture; when you lift the whisk, the mixture should flow down in strands.

Cook the pandan mixture with eggs
Next, place a pot on the stove with the strained pandan mixture, and cook on low heat for about 5 – 7 minutes.
When you see the mixture starting to heat up, turn off the stove, slowly pour it into the beaten eggs, and gently stir with the whisk in one direction so that both blend together.
Then, use a sieve to strain this mixture once more to avoid any leftover egg and pandan residue that could make the cream grainy.
Finally, take a new pot, add the pandan and egg mixture, place it on the stove, and cook on low heat for about 7 – 10 minutes until it boils again, then turn off the stove and let it cool in a bowl for 15 minutes.
Tip: To avoid burning and clumping the cream, do not cook on high heat and continuously stir evenly. -
Mix the pandan leaves mixture with whipping cream
When the pandan leaves mixture has cooled, place it in the refrigerator for 1 – 2 hours in the refrigerator to let the mixture thicken slightly.
