How to prepare Crispy Fried Pork Skin Rolls with Ground Meat

Prepare and boil the pork skin
After purchasing the pork skin, scrape off any remaining hair (if any). To eliminate the odor from the pork skin, rub coarse salt thoroughly over the surface and rinse with water.
Cut the pork skin into rectangular pieces, approximately the length of one hand and the width of about half a hand.
Then, roll the pork skin lengthwise and use dry string to securely tie both ends of the roll.
Place a pot on the stove, add 1 liter of water, the rolled pork skin, along with 1 tablespoon of peanuts and 1 teaspoon of salt. Boil for about 15 minutes until the pork skin is cooked, then remove it, untie the string, and let it cool.

Prepare other ingredients
Wash the shiitake and wood ear mushrooms briefly with water, then soak them in water for about 30 minutes to allow them to expand.
Once the mushrooms have expanded, remove them, drain, and chop them finely.
Wash the green onions and coriander, then chop them finely. Rinse the accompanying vegetables and let them drain.
