Prepare the potatoes
After purchasing the potatoes, peel them, cut them into thin slices, and then soak them in a bowl of water mixed with about 2 teaspoons of salt to clean the starch and prevent them from turning black.
Fifteen minutes before frying, you can spread the potatoes on a drying rack in a dry place or turn on a fan to dry them, or you can put them in the refrigerator for about 15 minutes before frying to help make them crispier.
Mix the potatoes with 1 tablespoon of cooking oil, so when frying, they won’t be dry and will taste better.
How to peel potatoes without itching:

- For potatoes that have already turned black, you can briefly boil them with a little fresh milk. This method can remove the already formed dark spots and gives the potatoes a nice milk aroma.

Place the potatoes in the air fryer, fry them at 150 degrees Celsius for 15 minutes. Then open the fryer, gently stir the potatoes, and continue frying them at 170 degrees Celsius for another 15 minutes to complete.
