  • Good taro tubers are usually round or egg-shaped. The skin will be slightly rough and have many roots. You should choose tubers that are still covered in soil as these are often fresh taro.
  • Moreover, you should choose tubers of moderate size, avoiding those with unusual shapes, long, or large as they may be a mix of other types of taro.
  • Avoid buying tubers that have dark spots, bruised or rotten parts. These tubers are often spoiled and won’t taste good when eaten.

  • You should choose ribs that are firm to the touch, with a dry and smooth surface, and have a distinct smell.
  • Fresh and delicious ribs will have bright red meat, neither too pale nor too dark. Especially, the ribs should not have a foul smell, should not leak fluid, and should not have bruises.
  • You should not choose ribs that are too small. Small ribs usually come from small pigs, and the meat will not be of good quality due to being slaughtered early or due to disease.

  • Prepare the taro

    After purchasing, wash 10 taro roots to remove the dirt.

    Next, boil 1 pot of water, then add 1 spoon of white salt along with the taro and boil it for about 8 minutes, then remove it to a basket to cool.

    Once boiled, you can easily peel the taro without irritation.

    Rinse 400g of pork ribs with water. Then, prepare a pot of boiling water with some sliced ginger and 1/2 teaspoon of white salt.

    Next, blanch the bones for about 2 minutes, then remove the bones to drain and discard the blanching water.

    Peel and wash the sour fruits. For the herbs like Vietnamese coriander, cilantro, and green onions, remove the roots and wilted leaves, then wash and chop them finely.

    First, you put a pot of water on the stove, then add the prepared bones to simmer for about 30 minutes over medium heat.

    After 30 minutes, add the taro and sour fruits along with 1 teaspoon of salt, and continue to simmer for another 15 minutes.

    When the taro and bones are tender, add chopped coriander, scallions, and 1/2 teaspoon of fish sauce and 1/2 teaspoon of monosodium glutamate, stir well and turn off the heat. You can adjust the seasoning to suit your family’s taste.
