How to make French Raspberry Friand Cupcakes

Separate the egg whites
First, separate 5 egg whites into a bowl, then use a whisk to beat them well.

Mixing the batter
Continue to add 145g of unsalted butter (melted), 170g of powdered sugar, 50g of flour, and 85g of sifted almond flour into the bowl. Use a whisk to gently stir all the ingredients together until well combined.
Next, use a spatula to gently fold the mixture from the bottom to the top. Bring the spatula down to the bottom of the bowl, lift the heavy ingredients up, and fold it to the side.
Add 1 teaspoon of vanilla and continue to repeat the process until the mixture becomes smooth.

Pouring into molds
Pour the batter into the cupcake molds, decorating with 2 – 3 raspberries on top of each cake.
Note: Only fill the batter to just under half of the mold, as it will rise during baking to the top of the mold.

Baking the cake
Bake the cake at 180 degrees Celsius for 25 – 30 minutes.
Note:
- Test if the cake is done by inserting a toothpick into the center of the cake; if it comes out clean and dry, the cake is done. Additionally, when you gently press down on the center of the cake, it should spring back immediately; if there is a dent, the cake is not done.
- After taking the cake out of the oven, place it on a rack to cool.

How to store the cupcakes:

- Before serving, take the cupcakes out to room temperature for 1 – 2 hours. With this method, you can keep the cupcakes for 2 – 3 days.
