How to choose good pumpkin
- To choose a good and quality pumpkin, you should pick one that is green or orange, firm, feels heavy, not bruised, and not wormy.
- For pumpkins that have already been halved, you should choose those with less pulp and with deep yellow or orange flesh.
- A good pumpkin will have a stem length of about 2 – 5cm. If the stem is missing, the pumpkin may have been picked for a long time, so it will not be fresh and won’t last long.
- You should absolutely not buy if the pumpkin is too large, with many worm holes or bruises on the skin.
How to choose fresh and delicious pork
- About color: Clean and quality pork will have a light pink or dark red color, with a dry membrane and the surface of the meat appearing tight. The pig’s skin is light pink, and the fat is bright and transparent.
- About smell: Fresh meat will have a characteristic aroma. Poor-quality meat will have an unpleasant and fishy smell.
- About elasticity: Press the meat with your finger; if it doesn’t leave a fingerprint and the meat bounces back quickly, it is fresh. Conversely, if the meat is mushy and does not return to its original state, the pig is sick.
- You should absolutely not buy meat that has unusual colors and smells, especially if it is slimy.

Prepare ingredients
After buying, peel the pumpkin, remove the seeds and fibers, and slice the flesh into slices suitable for eating.
Wash the pork, then use a knife to slice it thinly and place it in a bowl.
Peel the shallots, crush them, and chop finely. Remove the roots and wilted leaves from the green onions and coriander, wash them and drain, then chop finely.

Marinate the meat
After slicing the meat and placing it in a bowl, add 1 spoon of cooking oil, 1/2 tablespoon of sugar, 1/2 teaspoon of seasoning powder, and finally, 1/2 teaspoon of ground pepper for flavor.
Next, use a spoon to mix the meat well and let it sit for 15 minutes to absorb the flavors.

Stir-fried pumpkin with pork
You start by placing a pan on the stove, then add 2 tablespoons of cooking oil to the pan. Once the oil is hot, sauté the shallots until fragrant, then add the pumpkin to stir-fry.
Next, you add a little water, 1 teaspoon of seasoning powder, 1/2 tablespoon of sugar, and 1/2 teaspoon of monosodium glutamate to the pan and stir-fry over medium heat.
After 5 minutes, add the marinated meat to the pan and remember to use chopsticks to stir well so that the meat and pumpkin cook evenly.

Note:- To prevent the pumpkin from getting too soft and burning, you should not stir-fry it over high heat.
