Ingredients for Rice Pudding – Coconut Milk Rice Pudding with Mango Serves 6 people

Arborio rice 67 gr Mango 50 gr (chopped) Unsalted butter 1 tablespoon Coconut milk 250 ml Egg yolk 1 piece Unsweetened fresh milk 705 ml Sugar 50 gr Salt a little Vanilla extract 1/8 teaspoon Five spice powder 1/4 teaspoon

  • Rice Pudding, also known as rice dessert, is a cake that is popular in many countries around the world. Typically, the cake uses ingredients such as rice, water, and milk, and is then cooked until the rice mixture is thick, smooth, and chewy.

  • Heat the coconut milk mixture

    Place a pot on the stove, add 250ml of coconut milk and 675ml of fresh milk, then stir well over low heat until the mixture is warm.

  • Heat the butter rice mixture

    Place a pan on the stove and melt 1 tablespoon of unsalted butter over low heat.

    Then, add 67g of Arborio rice and stir well for about 1 minute over low heat.

    Note: Do not stir too long as it will cause the butter to turn brown, and the flavor of the pudding will not be good.

  • Cooking Rice Pudding Mixture

    When the rice mixture is blended, gradually add the coconut milk mixture and stir continuously over medium heat until the liquid is nearly evaporated.

    When the liquid in the pan is almost gone, continue to add the next portion of milk and keep stirring well.

    When the rice grains start to soften, add the remaining milk along with 50g of sugar and a little salt. Stir well until the rice grains are soft and cooked.

    Tip: The entire process of cooking the Rice Pudding mixture will take about 30 minutes.

  • Mixing the egg and milk mixture

    First, beat 1 egg yolk with 30ml of fresh milk.

    Then, turn off the heat and slowly add the egg mixture to the pudding pan, stirring continuously until well combined.

    Finally, add 1/8 teaspoon of vanilla extract, stir the mixture well and let it cool for 15 minutes.

  • Pouring into molds and decorating the cake

    Pour the egg and milk mixture into the cake mold, cover tightly with plastic wrap to the surface, and let the cake cool completely.

    Mix 50gr of diced mango with 1/4 teaspoon of five-spice powder, then place this mixture on top of the pudding cake for serving.

How to store the pudding

Seal the pudding jars tightly, store them in the refrigerator, and consume within 1 – 2 days.
