Prepare the Duck
When purchasing the duck, use a mixture of salt and white wine with crushed ginger and rub it all over the duck for about 5 minutes to eliminate the fishy smell. Then rinse with water and let it drain.
Tip: You can use a mixture of salt and lemon/vinegar to scrub the entire duck body, which is also an effective way to eliminate the duck’s odor.

Marinate the duck
Add the following ingredients to a bowl in order: red fermented tofu 60g, spicy satay 20g, shallots 40g, cooking oil 40g, water 40g, oyster sauce 20g, golden sugar 20g and mix well.
*Note: This marinade recipe is for 2 duck legs (approximately 800g).
Tip:
- If you have time, you should marinate the duck for about 1 – 2 hours for a more flavorful dish.

Make the dipping sauce
The roast duck with fermented tofu will be richer and tastier when dipped with the fermented tofu sauce made simply as follows:
4 cloves of garlic, along with 4 chili peppers (you can adjust according to your taste), 2 stalks of lemongrass, 150g fermented tofu, 90g condensed milk, 90g sugar, 1/2 tablespoon of MSG, 50 ml of filtered water, put all the above ingredients into a blender to blend together until smooth to complete the super delicious dipping sauce.

Roast Duck
After marinating the duck with spices, place it in the preheated oven at 220 degrees, which has been warmed up for 10 minutes, to start roasting. The duck will take about 25 – 30 minutes to roast in the oven, during which time you can observe through the oven’s glass door to check the status of the roasting duck inside.
Tip:
After the roasting time is complete, be sure not to take the duck out right away. Instead, mix honey with annatto oil and brush it evenly over the duck’s skin to achieve a beautifully golden color when you take it out of the oven.
