How to Choose Fresh Ingredients
How to choose fresh pork
- Select meat that is light pink or pale red, with the fat being slightly translucent white.
- Good quality meat has small fibers, is slightly firm, has a dry surface, soft skin, and a characteristic smell.
- Pressing on the meat with your hand should give you a sense of elasticity; when you remove your hand, the meat will return to its original shape without any dents.
- Avoid buying meat that is pale or overly dark, soft and mushy, leaking slimy fluid, or has a strange smell.
How to choose fresh and delicious chicken
For live chickens
- Select healthy chickens that move actively, with smooth feathers and a certain shine.
- Avoid choosing chickens that look lethargic, have ruffled feathers, closed eyes, and discharge from the eyes and nose.
- If the chicken is sick, the legs will show bruises, swelling, and the comb will be pale purple or blackened.
For processed chickens
- Choose chickens of moderate size and weight, with characteristic shiny yellow skin.
- The outer skin should be thin, feel smooth to the touch, not too rough, and have good elasticity.
- The inside meat should have a natural pink-red color, without bruises or blood clots.
- If buying pre-packaged products, carefully check the place of production and expiration date on the packaging to ensure safety when using.
