  • Avoid buying meat that is pale or overly dark, soft and mushy, leaking slimy fluid, or has a strange smell.

  • Select healthy chickens that move actively, with smooth feathers and a certain shine.
  • Avoid choosing chickens that look lethargic, have ruffled feathers, closed eyes, and discharge from the eyes and nose.
  • If the chicken is sick, the legs will show bruises, swelling, and the comb will be pale purple or blackened.

For processed chickens

  • Choose chickens of moderate size and weight, with characteristic shiny yellow skin.
  • The outer skin should be thin, feel smooth to the touch, not too rough, and have good elasticity.
  • The inside meat should have a natural pink-red color, without bruises or blood clots.

  • Prepare the meat

    Chicken and pork bought in minced form at the market should be washed clean with water and drained before processing.

    Effective methods to remove odors from chicken and pork:
    • Method 1: For pork, you can wash the meat with diluted saltwater and a little lemon juice or rub salt on the meat for about 5 minutes and then rinse with water.
    • Method 2: For chicken, remove the oil gland, fat, and any blood clots inside, then use crushed ginger to rub on the chicken body for about 10 minutes and rinse thoroughly with water.

  • Prepare other ingredients

    Soak the grape leaves in a diluted saltwater solution for about 5 minutes, then rinse thoroughly with water several times and let drain.

    Peel the onion and scallions, wash them, and let them drain. Dice the onion and finely chop the scallions.

  • Marinate the meat

    Add to the minced meat: 1/2 tablespoon of monosodium glutamate, 1/2 tablespoon of salt, 1 tablespoon of oyster sauce, 1/3 tablespoon of sesame oil, 1/2 tablespoon of sugar, 1/2 tablespoon of pepper, the diced onion and chopped scallions, mix well and marinate for about 20 – 30 minutes for the meat to absorb the seasoning.

    The marinated meat is placed into grape leaves in a sufficient amount and tightly rolled like spring rolls.

    Heat a pan on the stove with 4 spoons of cooking oil. When the oil is hot, add the rolled meat and fry for about 5 – 7 minutes.

    Then flip the meat over and fry for an additional 5 – 7 minutes until both sides are evenly golden, then turn off the heat, and place the fried rolls on a plate to enjoy.
