- You should choose types of rice paper for spring rolls that are not flavored.
- You should buy rice paper that is a bit thick so that when mixed, it remains chewy; if it is too thin, it will break after mixing.
How to choose good mango:
- For crispy and fragrant shredded mango, you should choose fresh mangoes, just picked.
- Choose mangoes that are ripe but still green, as ripe mangoes will be sweet, which does not match the flavors above very well.
How to make Vegetarian Rice Paper Salad

Prepare the ingredients
Cut the rice paper into small, easy-to-eat pieces; the shape of the paper can be according to your preference, such as square, long strips,…
Grate the mango into long strips.
Cut the tofu into thick strips, about the size of your pinky finger.
Roasted peanuts should be lightly crushed.

Fry the shallots
Slice the shallots thinly, then fry them in about 150g of oil until golden and remove them.

Processing tofu and fried tofu skin
You add about 1 – 2 tablespoons of cooking oil into the pan, wait for the oil to heat, then gradually add the pieces of fried tofu skin and fry until golden and crispy.
After that, take out the fried tofu skin and then add the tofu to fry until golden brown as well.
Next, fry 50g of sliced onions in 1 tablespoon of annatto oil. Once the onions are golden, add 1/2 tablespoon of vegetarian fish sauce, 1/2 tablespoon of seasoning powder, 1 – 2 tablespoons of chili powder along with the fried tofu and stir well before turning off the heat.

Mixing the rice paper
Take a small bowl and add the pre-prepared ingredients: Rice paper, mango, fried tofu, fried tofu skin, and fried shallots.
Then cut the Vietnamese coriander but be careful not to chop it too finely, and add it to the bowl along with 1 tablespoon of satay, roasted peanuts, and 1 tablespoon of dried garlic salt.
Finally, mix everything well and serve on a plate to enjoy.
