Hanoi plums 1 kg Granulated sugar 100 gr Salt 50 gr Garlic 10 gr Ripe chili 7 pieces Good fish sauce 2 tablespoons (choose fish sauce with good quality if available)

How to make Hanoi Plum Shake

  • Prepare the plums

    Soak the plums in diluted salt water for about 15 minutes. Use a knife to cut the plums in half, twisting the two halves in opposite directions to easily separate them. Place the plums in a lidded container.

    Add 50g of salt, 5 chili peppers, and 10g of minced garlic into a pan and dry roast until cool to make roasted salt.

    Gradually add 50g of sugar and 30g of roasted salt into a container with 1/2 of the prepared plums, close the lid and shake well. Let the plums absorb the seasoning for about 5 – 10 minutes to have a crispy and attractive salted plum dish.

    Tip: If you don’t make roasted salt, you can replace it with Tay Ninh shrimp salt if available!

    Mix 2 spoons of good fish sauce with 50g of sugar, 2 chopped chili peppers, and 1 teaspoon of roasted chili salt just made in step 2 into a bowl containing the remaining half of the plums. Mix well for about 2 – 3 minutes and let it sit for about 15 minutes for the plums to absorb the seasoning.

    You put the peeled plums into a glass container or a bowl with a lid, then gradually sprinkle in 2 tablespoons of shrimp salt and 1 tablespoon of sugar, then cover it up.

    You shake it vigorously, rotating in multiple directions to allow the salt and sugar to evenly penetrate the plums. You can taste it to adjust the seasoning to your preference.

    After shaking well, place the container of plums in the cool compartment of the refrigerator for about 15 – 30 minutes for the flavors to dissolve and soak into the plums for better taste.
