How to choose fresh and clean pearl oyster mushrooms
- When choosing pearl oyster mushrooms, you should select those that grow in clusters, with large and intact caps, avoiding those with caps that are too torn.
- If they are fresh and clean, when you hold a mushroom, the stem should feel firm, long, with the cap slightly concave and thin fibers under the mushroom cap.
- There are usually two types of pearl oyster mushrooms, gray or white. For braised dishes, you should choose gray pearl oyster mushrooms as they will be crunchier, sweeter, and chewier.
How to prepare Braised Oyster Mushrooms with Pepper

Prepare the ingredients
With 300g of oyster mushrooms, after purchasing, you need to cut off the root part, then split the mushrooms in half or thirds for easy eating.
Next, boil a pot of water, add a little salt and then drop the mushrooms in to blanch for about 2 minutes.
You prepare a bowl of cold water and drop the blanched mushrooms into it to keep the mushrooms crispier when cooking. Soak the mushrooms for about 5 minutes, then take them out, squeeze out the excess water and let them drain.
Finally, marinate the mushrooms with 1/2 teaspoon of seasoning powder, 1 teaspoon of sugar, and 1 teaspoon of ground pepper. Mix all the ingredients well and marinate for about 10 minutes for the mushrooms to absorb the spices evenly.

Cook the mushrooms
First, you caramelize sugar to make the seasoning for the mushrooms by putting 1 tablespoon of sugar and 1 tablespoon of water into a pot and stirring continuously until the sugar dissolves.
Note: Make sure to keep the heat low, when the sugar turns amber, turn off the heat and pour the syrup into a bowl.Next, you add 1 tablespoon of cooking oil and 2 teaspoons of minced garlic to the pan, then sauté until the garlic is slightly golden. Then, add the marinated mushrooms and stir-fry over medium heat for about 2 minutes.
Finally, pour the caramelized liquid mixture over the mushrooms and stir well, simmering on low heat until the oyster mushrooms are firm.
When the caramelized liquid is thick and slightly viscous, season to taste, add 2 teaspoons of finely chopped green onions, stir briefly, and then turn off the heat.
