How to Choose Fresh and Delicious Lobster

  • The best lobster is one that is still healthy and swimming actively in the water. Hold the lobster and its body should bend and be able to wiggle vigorously.
  • Furthermore, the lobster should have a sturdy and shiny shell, with bright colors that are very eye-catching. The claws of the lobster should be clear blue, strong, not broken, and move flexibly.
  • Additionally, you should pay attention to the joint between the head and the body. If the meat bulges too much, it means the lobster has been dead for a while and is no longer fresh.
  • Avoid choosing lobsters that are slimy and have a strong fishy smell, as these lobsters are no longer usable.

    Remove the stem and seeds from the bell pepper, wash it, and cut it into small cubes. Peel and finely chop the garlic.

    First, turn the lobster over and use a scissors to stab in the middle of the meat close to the head to kill the lobster, making it easier to prepare.

    Then cut off the fins, turn the lobster back over, and make a cut down the middle of the shell from the tail to the head, then gently pull apart the body and head.

    For the body, you just need to remove the shell that you’ve just cut.

    • Lobsters are very sharp, so be careful when preparing them.
    • The lobster shell is very hard, so using relatively sturdy and sharp scissors will make cutting easier.
    • To avoid losing the nutrients of the lobster, do not wash it with water after preparation.

  • Sautéed Lobster with Salt

    Take another pan along with 2 tablespoons of cooking oil and minced garlic, sautéing until fragrant over medium heat.

    Then add bell peppers and stir-fry for 2 – 3 minutes before adding the lobster and 2 tablespoons of Hong Kong chili salt, continuing to stir evenly for 3 – 5 minutes until the seasoning is absorbed, then turn off the heat and serve on a plate.

    Tip:
    • To ensure the lobster is evenly seasoned, use a pan with a relatively deep bottom, making it easier to stir the lobster.
    • Salt is very easy to burn, so to avoid affecting the flavor of the dish, stir quickly and don’t leave it on the stove too long.
