  • First, you should choose pieces that are pink in color; avoid pieces that are pale or faded as they may have been stored for too long, are likely to spoil, and have a strong odor.
  • Fresh meat usually has elasticity, so press lightly with your hand; if it springs back, it’s good. If it feels soft, mushy, or slimy, you should not buy it.
  • Pork belly should have a layer of white fat, without any lumps, and attached to a thin layer of rosy skin.
  • You should buy meat in the early morning to select the freshest pieces for yourself.

  • Prepare the meat

    The meat you bought should be washed with saltwater and then cut into pieces that fit the jar.

    Use a pot that is taller than the jars of meat, place a cloth at the bottom of the pot, and then put the jars of meat inside. Do not cover the jars tightly.

    Add hot water to about 2/3 of the height of the jars in the pot, cover the lid, and cook on low heat for about 25 minutes.

    Regularly check to see if the pot is boiling too vigorously and adjust the heat down if necessary.

    Use a skewer to gently poke the meat; if it goes through easily and you find the meat tender and translucent, then it’s successful.
