How to choose good pork ears
- To choose good pork ears, you need to observe carefully and select those that have a bright, pink color, not dark, dull, or any unusual colors. Those are the pieces of pork ears that are still fresh, crunchy, and delicious.

Prepare and pan-fry the pig ears
Wash the pig ears with a little salt and vinegar, then rinse clean. Let them drain and cut into appropriate pieces for pan-frying.
Pan-fry the pig ears until both sides are golden brown, then turn off the heat and let them cool.

Prepare the ingredients
Pick off the stems and wilted leaves from the herbs and vegetables, soak them in water with 1 tablespoon of salt for about 15 minutes, then rinse clean and drain well.
Wash the galangal and lemongrass, slice them, then put them into a blender to grind finely or use a mortar to pound them.
Wash the green mango, peel it, then shred it into thin strips.
Wash the garlic, chili, and kaffir lime leaves, then chop them finely. Toast the sesame seeds until golden.
Note: If you don’t have mango, you can substitute it with starfruit, removing the edges, seeds, and core, then slice it thinly. -
Mix the salad
Let the pig ears cool and slice them thinly. The thinner the pig ears are sliced, the tastier and more flavorful they will be.
Add 1 teaspoon of salt and 2 teaspoons of monosodium glutamate to the sliced pig ears.
Then, add the minced galangal and shredded mango on top along with a few slices of chili, squeeze in the juice of 1 lime, and season to taste.
Finally, sprinkle sesame seeds, lime leaves, and lemongrass, and mix well.
