Prepare the pork ears
Mix 1 basin of water with 1 teaspoon of salt and 50 ml of white wine, then soak the pork ears for 10 minutes.
After 10 minutes, scrape off any yellow stains and dirt from the pork ears, then rinse them clean with water. Next, trim the excess meat along with the pork ears and keep the upper part of the pork ears.Tips for cleaning pork ears and snouts, ensuring they are clean and odor-free- Use vinegar or lemon, salt: You need to use a mixture of vinegar and salt, or replace vinegar with lemon juice, and rub the entire surface of the pork ears and snouts thoroughly. After that, soak the pork ears and snouts in a basin of diluted lemon juice or vinegar for about 10 minutes, then remove and let them drain.
- Use flour or starch: You can apply flour to the pork ears and snouts, then rub thoroughly until foam forms, and scrape off the foam. Continue to rub with flour a few more times until the pork ears and snouts are clean and odor-free, then rinse with water, let them drain, and wait for cooking.
- Use alum: Soak the purchased pork ears and snouts in an alum solution for about 5 – 10 minutes, then remove and scrape clean. Then soak them in diluted salt water, scrape once more, and rinse with clean water.
- Use salt and starfruit juice: Squeeze starfruit juice over the pork ears and snouts, rub thoroughly, then scrape off the dirt from the outside. Rub again with a little salt and rinse with water, ensuring the pork ears and snouts are completely clean.
- Use rice washing water or pickled vegetables: Just soak the pork ears and snouts in a mixture of rice washing water or pickled vegetables for about 5 – 10 minutes, then remove and scrape clean with a knife. After that, use lemon to rub the entire surface of the pork ears and snouts, then scrape once more to finish!

Roll and bind the pig’s ears
After washing and separating the meat from the pig’s ears, roll them up tightly. The tighter, the better, and then use string to bind them tightly into a block.

Prepare the pig’s ear boiling water
Add the spices into a pot of water including 1 teaspoon of whole pepper, 1 teaspoon of monosodium glutamate, 1 teaspoon of seasoning powder, 1 tablespoon of oyster sauce, and 1 teaspoon of five-spice powder. Stir well to dissolve the spices.

Boil the pig’s ears
After preparation, add the pig’s ears to the spice water mixture. Next, boil the pig’s ears starting from when the spice water is still cold. Bring to a boil, then reduce the heat and simmer the pig’s ears for 20 minutes on low heat.
After 20 minutes, turn up the heat to medium to bring the water back to a boil, then uncover the pot, simmer for another 10 minutes, then cover again and simmer for another 10 minutes before turning off the heat.
After turning off the heat, let the pig’s ears soak in the spice water for another 30 minutes to help the meat become tender and not dry.
Remove and let cool completely, then place in the refrigerator for 3 – 5 hours. To enjoy crispy and delicious pig’s ears, place the whole bundle in the refrigerator, then take it out, cut the string, and slice into bite-sized pieces to serve.
