How to choose fresh and delicious pork

  • Choose pieces of pork that are dry, not slimy, have a characteristic color and aroma, and are firm and elastic.
  • When pressing your finger into the meat, it will leave a dent, but when you lift your finger, the dent will slowly disappear.
  • Do not buy pork that has been marinated with chemicals, as it may have an appealing color but will be dry, firm, and not sticky, with a mushy inside and a foul smell; when pressed with a finger, it will not have elasticity.

How to prepare Salted Pork

  • Prepare and marinate the meat

    After purchasing the pork, scrape off all the hair on the surface of the skin, then wash it thoroughly in diluted salt water and rinse well with clean water.

    Next, pat the meat dry and marinate it with 1 tablespoon of seasoning, 1 teaspoon of MSG, 1 teaspoon of salt, 1 teaspoon of pepper, 4 smashed stalks of lemongrass, 1 smashed ginger root, and 100g of green onion tops. Remember to massage the meat well so that the seasoning penetrates.

    After that, let it sit and marinate for 15 – 20 minutes.

  • Wrap the meat in banana leaves and aluminum foil

    After marinating the meat, place the piece of meat on 2 banana leaves and cover it completely. Then wrap the meat with another layer of aluminum foil to make it really tight.

  • Roast the coarse salt

    Add 1kg of coarse salt to a pan and stir evenly on the stove over medium heat to dry the salt.

    Roast for about 10 – 15 minutes until the salt is dried, then turn off the heat.

    Next, pour half of the roasted coarse salt into a pot and place the wrapped meat in it.

    Then pour the remaining half of the salt into the pot so that the salt completely covers the meat package, cover the pot, turn on the heat, and simmer over medium heat for 40 minutes.

    Finally, when the meat is cooked, turn off the heat, take the meat out of the pot, unwrap the aluminum foil and banana leaves, and cut the meat into bite-sized pieces to enjoy.
