How to choose fresh and delicious mountain apples
- Mountain apples are seasonal fruit. They typically bloom around March – April and bear fruit from August to December of the solar calendar. The best time to buy delicious mountain apples is at the end of August and mid-September.
- When choosing, select those mountain apples that are just ripe, and if you squeeze them gently, they should not be soft as they will taste better when soaked.
- Avoid buying overly immature apples as they may be astringent, and overly ripe ones will be mushy.
How to make salted wild apples
-
Prepare the wild apples
To clean off dust, wash the wild apples several times with water after purchasing. Then, use a knife to peel them, remove the seeds, and cut the apples into small, bite-sized pieces.
Put the apples into a bowl of warm water mixed with 1 tablespoon of salt, soak them for about 15 minutes, then take them out and let them drain.
Tip: To reduce the sap and astringent taste of the wild apples, after peeling, you should immediately soak them in a bowl of warm water with a little salt.
-
Marinate the wild apples
After letting them drain, marinate the wild apples with 2 tablespoons of sugar, 1 tablespoon of seasoning powder, 1 tablespoon of chili powder, and 1 tablespoon of lemon juice, then use gloves to mix well, allowing the wild apples to absorb the spices for about 15 – 20 minutes before serving.

How to preserve fresh sour hawthorn
- To keep the hawthorn crunchy, you should consume it within the day and right after marinating (leave it outside for 3 – 4 hours in cool weather). Do not leave it at room temperature for too long as it will release water and become soft, making it less enjoyable to eat.
- If you do not use it all, you should store the hawthorn in a jar or a sealed plastic container, place it in the refrigerator’s cool compartment, and consume it within about 2 days.
