Information about fried salt powder
- Fried salt powder is a ready-to-eat seasoning, used for dipping, mixing, or sprinkling on fried dishes to create fried salt dishes.
- Fried salt powder is made from glutinous rice, mung beans, lotus seeds, coarse salt, pepper,… roasted and then ground into powder.
- You can buy ready-made fried salt powder at markets or supermarkets nationwide or make it yourself according to the recipe in the article!
How to choose fresh and delicious rươi
- It is best to buy seasonal fresh rươi (usually in October and November), of medium size (not too big or too small), plump, bright pink, still alive and moving vigorously.
- Avoid buying rươi that are small, very thin, moving weakly, and are less active as they are about to die.
- Buy from reputable places in markets, supermarkets,… to ensure the quality of rươi.
How to make Salted Rươi

Clean and blanch Rươi
For fresh Rươi, you clean it by placing Rươi in a basin of water and gently washing it by hand to avoid breaking its belly. Next, you put a pot of water on the stove and bring it to a boil at about 80 – 90 degrees Celsius, then add the Rươi.
After that, blanch the Rươi for about 3 – 5 minutes, using chopsticks to stir gently a few times, so that mud, hair, and legs of the Rươi fall off, then you take the Rươi out and let it drain.
For frozen Rươi, you should move it from the freezer to the refrigerator to thaw gradually, then perform the cleaning process as with fresh Rươi.
Tip:- You should blanch in water at 80 – 90 degrees Celsius; if the water is too cool, it will crush the Rươi, and if it’s too hot, it will break the Rươi.
- Avoid using soaking in water or a microwave to thaw Rươi, as this can lead to bacterial contamination, which is dangerous.

Marinate Rươi
Put the cleaned Rươi into a bowl and marinate with 1/3 teaspoon of MSG, 1/3 tablespoon of seasoning granules, then mix well, letting it marinate for about 8 – 10 minutes for the Rươi to absorb the spices.
Next, add 1 egg, 2 tablespoons of tapioca starch into the bowl of Rươi and mix the mixture thoroughly.
Small tip: If you like spicy food, you can add 1/2 teaspoon of chili powder or 1 sliced chili.

Sauté the shrimp
You heat a pan over medium heat, add 100ml of cooking oil, wait for the oil to heat up, then add the shrimp to fry.
Use a spoon or chopsticks to gently stir the shrimp so they don’t stick together, fry until both sides are golden, then remove and let them drain.
Next, sprinkle 2 tablespoons of roasted salt evenly over the shrimp to finish.
Tip: It is advisable to fry over medium heat so that the shrimp does not burn and do not fry too long, as the shrimp will become dry and lose its inherent deliciousness.
How to make roasted salt
- Prepare ingredients such as green beans, regular rice, and sticky rice, washed and kept separately.
- Add clean water to each ingredient that has been prepared separately and soak for about 25 – 30 minutes, then drain the ingredients.
- Mix the salt and pepper together and roast them dry in a pan until the salt is fine.
- After draining, roast the sticky rice and regular rice separately over low heat. As for the green beans, roast until golden until fragrant.
- Next, put the rice and green beans into a grinder or mortar and crush them, then add the salt and pepper and mix well to finish.
