How to choose fresh and delicious shrimp
- Fresh and delicious shrimp will have a transparent outer shell, while uneven or dark-colored shrimp are usually dead.
- Additionally, choose shrimp that feel strong when picked up, can jump far, and have their body and head still tightly connected.
- Avoid buying shrimp with overly curved bodies, inflexible shell joints, especially if the flesh is mushy, as this indicates that the shrimp have been left too long and are no longer edible.

How to make Western Salted Shrimp

Prepare the ingredients
First, for the shrimp you bought, use scissors to cut off about 1/2 of the head and legs. Next, put the shrimp in a bowl with some salt and mix well with chopsticks.
Then, rinse it with clean water 1 – 2 times and let it drain. To make the dish more visually appealing, use bamboo skewers to skewer along the shrimp’s backbone from the bottom upwards.
Finally, peel the shallots and garlic, then chop them finely with a knife.

Steaming shrimp
Once you have prepared the ingredients, place a steaming pot on the stove with 1.2 liters of water and 1/2 teaspoon of ginger powder in the lower compartment, while placing all the skewered shrimp in the upper compartment and evenly sprinkle with 1/2 teaspoon of ginger powder, then steam for about 10 minutes.
When the shrimp turns a reddish-orange color, turn off the heat and transfer the shrimp to a plate.
Tip: To avoid losing the shrimp’s sweetness and nutrients, do not steam the shrimp for too long. -
Making shrimp salt sauce
At the same time, take a pot and add 3 tablespoons of Tây Ninh shrimp salt, 1/2 tablespoon of ground bird’s eye chili, 1 tablespoon of chili powder, 2 tablespoons of sugar, 1 tablespoon of cooking oil, and 100ml of water.
Next, place the pot on the stove and continuously stir with a spoon, cooking for about 5 – 7 minutes over medium heat.
When the mixture boils and becomes smooth, season to taste, turn off the heat, and pour into a bowl.

Roasting shrimp
Next, you heat a pan on the stove with 3 tablespoons of cooking oil, 4 pieces of unsalted butter, 4 cloves of garlic, and 4 shallots, sautéing them until fragrant over medium heat.
When the butter has melted, add all the boiled shrimp and the bowl of sauce you just made, stir well with a ladle, and roast for about 3 minutes.
When the shrimp have absorbed the seasoning evenly, turn off the heat and serve on a plate to enjoy!
