How to make Melt-in-your-mouth Layered Salted Egg Cake

  • Make the filling

    First, place 2g of gelatin powder and 10ml of cold water into a bowl, stir well, and soak for 10 minutes for the gelatin to swell.

    Place a pan on the stove, add 70ml of whipping cream, 2g of soaked gelatin, 10g of cream cheese, 20g of powdered sugar, and 10g of custard powder. Stir the mixture over low heat until well combined.

    Next, add 3 mashed salted egg yolks. Continue to stir until the eggs are evenly mixed into the mixture.

    Prepare a mold lined with a layer of plastic wrap inside. Then, pour the filling into the mold, seal it tightly, and freeze for 3 hours in the refrigerator.

  • Mix and knead the dough

    The water dough

    Put 130g of flour type 8, 20g of flour type 13, 20ml of cooking oil, and 20g of melted unsalted butter into a bowl and mix well.

    Stir 30g of sugar with 80ml of water, then pour into the bowl of flour and knead the dough with a machine until a uniform, smooth, and elastic mass forms.

    Tip: If you don’t have a dough kneading machine, you can knead by hand until the dough becomes smooth and elastic, and does not stick to your hands when touched.

    Oil Dough Part

    Add 100gr of type 8 flour, 20gr of type 13 flour, 25ml of cooking oil, and 25gr of melted unsalted butter into a new bowl, then use a mixer to knead until the ingredients are well combined.

  • Rolling the Dough

    Divide the oil dough and water dough into 9 parts and roll them into balls, with a ratio of each part being 20gr of water dough to 10gr of oil dough.

    First, roll out the water dough, place the oil dough in the center, pinch the edges of the dough together, and then roll it into a ball.

    Next, flatten the dough ball and roll it up again, continuing to repeat these 2 steps 2 more times.

  • Shaping the cake

    Next, shape the dough into a round ball and roll it out thin. Then, place the filling in the center, pinch the edges of the dough together, and roll it into a ball.

    Finally, place the cake into a cupcake paper mold.

  • Baking the cake

    Preheat the oven to 200 degrees Celsius for 15 minutes. Then, bake the cake for the first time at 200 degrees Celsius for 5 minutes.

    Next, brush a layer of egg yolk on the surface of the cake, sprinkle a little black sesame, and bake for the second time for an additional 10 minutes at 150 degrees Celsius.
